A significant share of food waste originates in the food services domain and HoReCa sector. Organizational improvements leading to the decrease of food waste and related costs in HoReCa are needed to make progress in this issue. A systems engineering approach was applied to examine the links between food waste generated in the HoReCa industry and the Sustainable Development Goals (SDGs). A literature review discovered two dimensions of actions leading to decreasing food waste in HoReCa; i.e., actions triggered by companies and by authorities (e.g., governmental policies). Additionally, customers and society were also considered. A framework is proposed to explicitly illustrate the dependencies of different micro actions devoted to food waste reduction in HoReCa in support of the SDGs. The other dimension of this framework is macro policies and their impact on SDGs. To increase food waste reduction awareness and collaboration, stakeholders on both the macro (launched by authorities for the whole sector) and micro (initiated by single organizations on their own) levels must work together. The results of this research will be useful in coordinating the efforts of all (consumers, HoReCa companies and suppliers, policymakers and administrations on different levels) involved in the supply chain of food production and consumption.

Internet of Things (IoT) technology has advanced in recent years, leading to improvements of manufacturing processes. As a result of such improvements, environmental sustainability assessments for technologies have been requested by international control agencies. Although various assessment approaches are widely applied, IoT technology requires effective assessment methods to support the decision-making process and that incorporate qualitative measures to create quantifiable values. In this paper, a new environmental sustainability assessment method is developed to assess radio frequency identification (RFID) and wireless sensors networks (WSN). This integrated assessment method incorporates a modified and redesigned conceptual methodology based on technical project evaluation (IMATOV) and an extension of conventional lifecycle measures. The results shows the most and least important metrics. The most important metrics are the categories “electronic devices disposed of completely” and “decrease in stocks”, with the greatest GWFs (20% and 19%, respectively) and IAVs (127% and 117%, respectively) and moderate consolidated degrees of fulfillment. Relatively low degrees of fulfillment are achieved by categories such as “decrease in numbers of assets”, “supply chain echelons benefiting RFID”, and “tag lifecycle duration”, with IAVs below 10%. This study promotes an integrated method to support decision-making processes in the context of environmental sustainability assessments based on lifecycle measures.

The SARS-CoV-2 pandemic is spreading rapidly and threatening lives all over the globe. Due to the pandemic, economies all over the world are in deep distress due to disruption in work and operations across all sectors. The present case study was performed for a private Indian manufacturing company that has been affected to a great extent due to this pandemic, as India has the second highest number of SARS-CoV-2 cases after the USA. The deeply troubled company’s current predicament is very complex, as various factors are responsible for the crisis. In order to restore the company back to normal functioning, these factors were studied and evaluated. A diagnostic survey was conducted to obtain data about current working conditions of company. Data from the survey were analyzed qualitatively and quantitatively to identify and evaluate the disruptive factors. Based on this analysis, problems in operational activities were identified and appropriate improvement actions (best practices) were proposed. Furthermore, the proposed improvement actions were assessed from a sustainability perspective to check their feasibility. The best practices framework was generalized to a three-step continuous improvement framework oriented around preparedness for future pandemic-like disruptions. The proposed framework may constitute an indication and set of best practices for consideration by other manufacturing companies that find themselves in a similar situation to the analyzed case study.

Warsaw University of Technology (WUT) is the biggest technological university in Poland. WUT has since educated many successive generations of engineers, thereby making a significant contribution to the advancement of science and technology both in Poland and in the world. Over 500 professors deliver education to almost 31,000 students. The Faculty of Production Engineering (FPE) is one of the 19 faculties of WUT. This chapter presents the results of that Faculty, from nineteen survey respondents. The main focus of the university is put on economic issues, followed by cross-cutting themes, then environmental issues, and social issues. The faculty contribution is medium and the strength is medium. The ranking of the competences shows that Inter-disciplinary work is the highest, followed by Systems thinking and Anticipatory thinking. The ranking of the pedagogical approaches resulted in Lecturing and Project- or Problem-based learning were the highest, followed by Supply chain/Life cycle analysis. The correlation showed that Mind and concept maps, Participatory Action Research, Case studies, and Supply chain/Life cycle analysis developed the most competences. The competences most developed were Personal involvement, Communication and use of media, and Empathy and change of perspective. The results show that there is a wide divergence between the issues of each dimension. The commitment of WUT faculty and educators needs to foster a transformation in teaching to enhance the learning process in sustainability.

A significant share of food waste originates in the food services domain and HoReCa (hotels, restaurants, catering) sector. Organizational improvements leading to the decrease of food waste and costs in restaurants are needed. The literature reports on applications of lean management in service businesses, and while food services belong in this category, the literature contains few works on specific applications in this domain. Those studies are limited mainly to economic aspects. Nor was there evidence of the applicability of lean management to achieve food waste elimination. This article analyzes the applicability of lean management methods for food services in order to achieve efficient operations and eliminate food waste, based on a literature review and three case studies from Poland. Lean management was found to be useful in these cases to decrease food waste and reduce operational costs. The case studies suggest a set of activities for organizations delivering food services to streamline their processes by applying lean management practices. This study contributes to the theory and practice of sustainable restaurant management.

Industry 4.0 (I4.0) has become a widely accepted manufacturing paradigm across a wide range of industries. It includes an array of various approaches, tools, techniques, and methods. They were known to researchers before, but when combined they build a new reality, which needs procedures for the assessment of technologies and manufacturing processes. Current assessment methods often fail to incorporate economic, environmental, and social impacts simultaneously in an integrated way. The potential implementation of a sustainability assessment procedure on a larger scale is seen for (well-developed) Radio Frequency Identification (RFID) technology. The measures for assessment were identified through a literature review and validated by expert panels. Validation measures were quantified using multi-criteria decision making (AHP). Criteria ranking was used for reasoning if the assumed modular structure responded to the experts’ needs. To connect the existing research gap, a holistic and integrated assessment method for I4.0 applications, depicted in a structured way and tailored for RFID technology, is developed, which constitutes a research gap in current literature on this topic. Results showed that a modularized structure of approach (module—group of measures—measures [as indicators]) for RFID sustainability assessment, which depends on the complexity of this technology, may be a convenient method for assessment of I4.0 technologies. It was confirmed that all sustainability perspectives are important due to their contributions to supporting decisions and should be considered in the assessment of RFID. On the other hand, it can help managers and practitioners implement the assessment method in their practice to reduce pollution and save the environment.

The article elaborates upon a successful model of postgraduate studies on lean manufacturing. The subject of the research was nine editions of the Kaizen Academy postgraduate studies organized by the Warsaw University of Technology and the Kaizen Institute in the years 2009–2018, that still enjoys interest in the market. A detailed qualitative analysis of this case, followed by a comparative analysis with other post-graduate programs of this type on the national, European, and global level should make it possible to find what is necessary to launch and actively operate for a long time in the (considerably competitive) market of qualification raising programs related to Lean Management (critical success factors). The study has also identified the differences between a successful program, analyzed in detail, and other available programs described in the literature and on the Internet. This has been achieved through a structured analysis of thirty-nine postgraduate programs identified by querying scientific databases and the Google Internet search engine. Best practices and models of postgraduate education on Lean Management have been discussed, and the thirty-nine programs comprising the identified sample have been compared. Considering the very general level of the data available in terms of the organization of postgraduate programs, it has also been assessed if they follow constructivism and experiential learning paradigms. This has been achieved by including the industrial days/visit indicator in the comparison. Given its high value, it has been identified as a success factor of the postgraduate curriculum on Lean Management.

Sustainability and Industry 4.0 (I4.0) are trending concepts used in the literature on industrial processes. Industry 4.0 has been mainly addressed by the current literature from a technological perspective, overlooking sustainability challenges regarding this recent paradigm. The objective of this encyclopedia entry is to evaluate the state of the art of relations between sustainability and I4.0. The goal will be met by (1) mapping and summarizing existing research efforts, (2) identifying research agendas, (3) examining gaps and opportunities for further research. Web of Science, Scopus, and a set of specific keywords were used to select peer-reviewed papers presenting evidence on the relationship between sustainability and I4.0. To achieve this goal, it was decided to use a dynamic methodology called “systematic literature network analysis”. This methodology combines a systematic literature review approach with the analysis of bibliographic networks. Selected papers were used to build a reference framework formed by I4.0 technologies and sustainability issues. The encyclopedia entry contributes to the Sustainable Industry 4.0 reference framework with application procedures. It aims to show how I4.0 can support ideas of sustainability. The results showed that apart from a huge contribution to both concepts, many papers do not provide an insight into realization of initiatives to introduce Sustainable Industry 4.0.

The enterprises to be competitive are constantly looking for continuous increase of productivity, quality and level of services. With the development of Industry 4.0 concept, manufacturers are more confident about new advantages of automation and systems integration. Lean management is well developed and empirically proven effective managerial approach. Combining Lean and Industry 4.0 practices seems to be necessary evolutionary step for further raise the level of operational excellence (exploitation of finance, workload, materials, machines/devices). There is an increasing number of Industry 4.0 solutions used to reduce waste (as known from Lean Management). Therefore, the main objective of this article aims at presenting the results of a literature review on the concept of ‘Lean Industry 4.0’. Dynamic methodology called ‘Systematic Literature Network Analysis (SLNA)’ was used. It combines the Systematic Literature Review approach with the quantitative analysis of bibliographic networks to detect emerging topics and the dynamic evolution of the topics. The paper is a comprehensive systematization and rationalization of knowledge about the integration of LM and I4.0 concepts, identifies the most important research trends and defines directions for future research. The article contains a framework that presents the current state of knowledge in the area of Lean Industry 4.0. Both lean management and Industry 4.0 are obviously important in practices of modern manufacturing companies. Lean management a is well-known and deeply researched approach while Industry 4.0 is also well recognized, but still relatively new with a big part of the theory and practice to be developed, validated, verified and applied. However, Industry 4.0 gains more and more interest of both researchers and practitioners and is very important for manufacturing and other industries. The main goal of this paper is to analyze synergies, or deficits, of lean management and Industry 4.0. For this purpose, a lean framework for waste typology was combined with the Industry 4.0 potential to decrease those wastes. It was also analyzed if some properties of Industry 4.0 may lead to increase in some types of waste. Each type of waste was analyzed to consider its possible decrease and increase through the application of Industry 4.0 grounding of field practice and literature analysis.

In recent years, manufacturing processes have interacted with sustainability which are implemented in the cost-effective ways to minimalize energy, decrease negative impact on the environment and are safe for society. However, the attention has been on separate sustainability assessment methods combining energy Life Cycle Analysis (LCA) to evaluate environmental impact, Life Cycle Cost to analyze costs, and Social Life Cycle Assessment to consider energy in human resources through mapping them in “energy LCA-based value stream map” (eVSM). In this paper, the energy LCA-oriented sustainability assessment approach is used to visualize the energy sustainability of the milk processing in terms of technologies. It enables interventions in the considered technologies through the effective analysis of energy flow. The results pictured that the appropriate integration of technologies into eVSM offers LCA-indicators database regarding the energy sustainability.

Mobility and transnational migration are current social developments among the population of the European Union. These developments in both society-at-large and companies, linked to the challenges of sustainability, lead to new requirements for working in the European Union. Teaching and learning in higher education needs to adapt to these requirements. As a result, new and innovative teaching and learning practices in higher education should provide competencies for transnational teamwork in the curriculum of tomorrow's engineers in order to ensure their competitiveness in the job market. A transnational project-oriented teaching and learning framework, which provides the future key competencies for young engineers was implemented in the course European Engineering Team (EET). Engineering students from four countries participated in a new project-based course that focused on the development of innovative and sustainable products and opportunities. The goal of this paper is to present results and lessons learnt from three cohorts of EET.

Industrial engineering is a field dealing with optimization of complex processes, systems, or organizations by developing, improving and implementing integrated systems of people, money, knowledge, information, equipment, energy, and materials. Hence, the scope of industrial engineering is wide and includes various fields, from manufacturing, through banking, different types of services, to administration and healthcare. Various industrial engineering tools could be implemented in healthcare settings. The use of such tools is popular in western economies. For example, simulation modelling of services is popular in the US. However, there is still a very limited number of case studies on the application of such tools in healthcare that would consider the Polish economy. The aim of this paper is to present selected successful applications of lean management tools in the Polish healthcare. This may serve as an inspiration for healthcare organizations to search for and implement methodological approaches to improve their services.

Nowadays, manufacturing companies need to operate a business and apply technology that are competitive as well as sustainable from a social, environmental as well as economical perspective. One of the technologies gaining substantial interests over manufacturing companies is radio frequency identification, which supports logistics and information flow within organizations. Much of the literature and theory surrounding assessment of RFID systems explores environmental (mainly positive) and economic (cost and benefits) impacts only. Some researchers have argued that current assessment methods often fail to involve sufficient evaluation in terms of social considerations. Therefore, an indicator-based sustainability assessment framework of RFID technology should be expected. This paper aims to close this research gap in the literature and present an indicators framework for sustainability assessment of RFID systems in manufacturing. Results depict a list of designed RFID indicators which, depending on the complexity of RFID technology to be implemented may convenient for assessing sustainability of the technology. It concludes based on the analyzed literature that the identification of RFID systems’ industrial indicators lies in accessibility and reliability data used for their validation. Finally, the indicator-based framework for sustainability assessment is verified for its usefulness on the case of dynamic spaghetti diagrams supported by Real Time Locating System. The paper concludes with a brief discussion on opportunities and limits of RFID-dedicated sustainability indicators.

Academic e-learning is not a new phenomenon world-wide or in Poland. However, there are only a few publications examining academic e-learning in Poland from a wider perspective (i.e., country-wide, and not only from that of the specific course, faculty member, or university orientation), and none of them present complex analysis and diagnosis. The goal of this paper is to present an investigation of academic e-learning in Poland in both public and private universities. The sample of 139 universities was surveyed, and relations between variables – such as e-learning process characteristics and university characteristics – were analysed via hypotheses testing. Results of the survey may constitute a basis for comparison on a national and international level and offer strategic directions for university authorities.

Głównym celem artykułu jest identyfikacji praktyk szczupłego zarządzania stosowanych w projektach informatycznych. Zidentyfikowano stan wiedzy oraz relacje pomiędzy praktykami zarządzania szczupłego a projektami IT opisanymi w literaturze. Przedstawiono typologię strat specyficznych dla projektów IT. Wśród popularnych technik stosowanych w szczupłym zarządzaniu mapowanie strumienia wartości oraz karty kanban określono jako najczęściej stosowane w branży IT. Przedyskutowano charakterystykę kart kanban w IT. Dla typowych dla każdego wdrożenia lean działań, tj. analizy strumienia wartości, eliminacji strat, ssącego sterowania produkcją, orientacji na jakość, ciągłego doskonalenia, dokonano porównania w kontekście technik stosowanych w produkcji oraz IT. Efektem jest zestawienie mogące służyć praktykom lean w IT jako bazowy model referencyjny. Przykład zastosowania mapowania strumienia wartości oraz kart kanban w małym przedsiębiorstwie w dziale inżynierii oprogramowania pokazuje, że praktyki lean w IT mogą przynosić wymierne efekty.

Radio Frequency Identification (RFID) is still a relatively new technology for many manufacturing and logistics companies. These companies experience uncertainties about RFID implementation, so they take steps to mitigate them. This article presents multiple case studies to design a conceptual framework to mitigate such barriers. The goal of this research was to test propositions that companies: often are not convinced about the maturity and performance of RFID technology; perform typical actions to test uncertainties; and need proof of the benefits of RFID technology before implementation. It was demonstrated that companies conduct proof of RFID technology activities (demonstrations and reference visits) to test RFID performance. These are required to test the technology in operation. Conclusions of this research may serve RFID systems providers and end users of technology by facilitating a better understanding of decision making processes during early phases of RFID implementation.
