Food products are normally classified as credence goods, and their quality cannot be fully ascertained by consumers even after being consumed. Online commerce exacerbates information asymmetry, which breeds a market filled with low‐price and poor‐quality food products. This study aims to examine whether certificate authority's inspection information sharing policy (IIS policy) can improve food quality in online commerce. The results suggest that producers tend to provide high‐quality food products, whereas both the online platform and food producers can earn more profits by adjusting selling price and commission fees under the IIS policy. Meanwhile, consumers also benefit from IIS policy.

This study explores the manufacturer's marketing and pricing strategies for online channel under different offline channel power structures. Through these strategies, the manufacturer sells products through an offline retailer and an e-tailer. The manufacturer decides the cooperation mode with the e-tailer by the reselling or the agency selling mode and the pricing strategy on the basis of the power structures, i.e., vertical Nash structure (VN), manufacturer Stackelberg structure (MS), and retailer Stackelberg structure (RS). We find the manufacturer selects the online agency selling mode when the commission rate is less than the given threshold. As long as the commission rate is more than another threshold, the manufacturer selects the online reselling mode under the VN structure; however, the manufacturer selects the online agency selling mode under the other two structures. As well, the offline wholesale price is higher under the MS structure than those under the VN and RS structures. When the manufacturer selects the online agency selling mode, the offline retail price is highest under the MS structure, and the online retail price is highest under the VN structure. Meanwhile, consumers can always obtain a higher surplus in the online agency selling mode under all offline power structures.

In view of the mushroom growth of e-commerce and green production, some enterprises have shifted to provide environment friendly products and made full use of the online sales channel to enhance competitiveness. This paper investigates a dynamic pricing strategy and greening issues for a two-stage dual-channel supply chain containing a manufacturer and a retailer. Furthermore, we discuss pricing and green strategies for members under decentralized and centralized decision scenario. In decentralized decision scenario, two decision strategies are studied and compared. To improve supply chain performance, a cost-sharing contract is proposed. We find the market demand is concave by selling price and the market demand reaches the largest value when selling price equals to reference price. This result shows that the manufacturer should strategically decide the current selling price with respect to the price in the previous period. Sensitivity of consumers to the greening levels, the basic selling price and the greening levels have a positive influence on the performance of the supply chain. Moreover, the products in the centralized decision enjoy higher greening levels than that in decentralized decision scenario. In this study, we contribute to explore the effect of reference price in a dual-channel supply chain management and suggest a two-stage decision strategies to improve supply chain performance with a contract. The limitations and potential future directions are also provided to conclude the study.

In many developing countries, the public is shifting its focus from economic growth to quality-of-life issues. As a result, there is extensive demand for better public administration of quality-of-life issues, ranging from air pollution to food safety problems, that threaten ordinary peoples’ health and daily lives. This article analyzes the determinants of public perceptions of food safety and the administrative effects of regional governance in different provinces with nationwide survey data. A two-level hierarchical linear regression model (HLM) with provincial factors as background-level variables and demographic factors as individual-level variables was developed to measure the influence of these factors on public perceptions of food safety. The results showed that female, young, and well-educated urban residents perceived greater risks to food safety than other groups. Administrative fiscal expenditures and local normative documents in different provinces did not have significant effects on public perceptions of food safety. However, food safety inspections weakened public perceptions of food safety. We thereby suggest that provincial governments invest in more efficient food safety projects and enhance the publicity of normative documents in popular media.

Market demand mostly possibly affected by the seller’s credit in many industrial practice, this study aims to investigate the beneficial performance of the supply chain considering the credit-linked demand under three different circumstance. We firstly develop a demand model which is a function of the trade credit period. Moreover, the supplier determines optimal trade credit period and the retailer determines optimal replenishment cycle time. Under these conditions, we first present optimal solutions for the centralized decision and the decentralized decision in Stackelberg models. Then, we develop a set of theorems to determine the optimal results. Finally, we provide a numerical example and sensitivity analysis to illustrate the efficiency of the proposed models and optimal solutions. The finding reveals that the trade credit period, replenishment cycle time, retailer’s profit, supplier’s profit and profit of the supply chain are strongly influenced by ordering cost, retail price, production cost, holding cost and the interest rate. In addition, we also find that under the condition of the trade credit, the supply chain that the supplier dominated has a better performance than that the retailer dominated. This paper studies the impacts of food safety risk perception on the different dimensions of governmental trust. A logistic regression model was constructed based on the multidimensional analysis of government trust (i.e., competence, benevolence and honesty) with food safety risk perception, economic growth, combating corruption, social trust, political participation and demographic characteristics as explanatory variables. The main findings are that respondents with low levels of food risk perception, high political participation and a positive evaluation of economic growth and anti-corruption performance show high levels of trust in government competence, benevolence and honesty. Social trust has a spillover effect, which has a significant impact on government competence and benevolence but has no significant impact on the honesty of the government, which reflects the distinction between different dimensions of the public’s trust in their government. Highly educated people have low levels of trust in government competence, high levels of trust in government benevolence, and no significant impact on the judgment of government honesty. In general, the public speak lowly of the status of food safety and have limited interest in political participation. The government is better to strengthen food safety supervision and develop social capital to further enhance the public’s governmental trust.

In commission–agency case, an agent has an incentive to increase the recommended order quantity (ROQ) to maximize the expected profit. This study refers to a retailer's degree of dependence on the agent's ROQ as “trust.” We aim to formulate the agent and the retailer's decisions with trust‐based optimization models. To conduct the study, we first build the demand prediction and income model of the retailer and the agent with a trust‐updating model. Furthermore, we investigate the facts of the retailer's trust value by some experimental studies. Some managerial insights are thereby given and helpful to practice.

Food safety is one of the residents’ initial demands in daily life, and the negative perception of food safety potentially leads to public panic and dissatisfaction with government performance. Existing literature only focused on certain regions in China by using different indicators, and their results varied and lacked comparability. This paper explores influencing factors of the public’s satisfaction with food safety by conducting a nationwide survey in China. Factors cover several demographic variables while considering the nature of governments to reveal the difference among provinces. The results show that demographic factors such as gender, age, type of residence, education, and census register are positively correlated with food safety satisfaction, while annual income is not significant. Evaluation of government regulation efforts has a positive correlation with food safety satisfaction. People with higher trust in the government show higher satisfaction with the food safety situation. On the province level, per capita GDP, per capita food safety fiscal expenditure, and food safety fiscal expenditure level are positively correlated with food safety satisfaction. The empirical findings are helpful for government regulations; we thereby discuss our analytical results and suggest some governmental policies.

Many manufacturers and retailers have cooperated for low-carbon production in various industries. This study examines the role of consumers’ low-carbon preference in this cooperation. We construct four scenarios to investigate the effects of consumers’ low-carbon preference on the market equilibrium of supply chains’ product selection strategy. Based on the game theoretic models, optimal solutions for the two supply chains are derived with different consumers’ preference for low-carbon products. Through the discussion, we uncovered the influence of consumers’ preference on price and demand and the relationship between the influence coefficient of retailers’ promotional effort on consumers’ utility and retailer profits. In addition, given the increase of government’s low-carbon production subsidy, two supply chains will both more likely choose low-carbon production. Interestingly, under the government subsidy, the profit of manufacturer will increase or decrease more than its retailer and the market structure will not change if the two supply chains have chosen low-carbon production.

Examining the variances in the assessments of risk, as perceived by residents, facilitates the development of appropriate risk information communication strategies. This paper aims to identify the effects of information source patterns on perceived food safety risks based on demographic factors. A national survey was conducted to examine, by means of multiple regression analysis, the relationship between the public’s perceived risks, demographic factors and information access. The study finds that residents’ preferences for information sources have been empirically proven to significantly affect their perceptions of food safety. We also find that more educated young urban dwellers, as well as those without cohabitation experience, tend to perceive a higher level of risk with respect to food safety. In contrast to our expectations, gender, family income and family size are not significantly correlated with the perception of food safety risk. The findings help to explain residents’ attitudes toward food safety administration and reactions to food hazards in the Chinese context. It is recommended that the governing authorities strengthen their communication capacities using modern communication media and make full use of traditional and face-to-face communications with respect to regulations.

Container transportation has developed rapidly in recent years because of the growth of international trade. However, transportation demands along shipping lanes or in different regions are unbalanced and change over time. This high-growth and uncertain operation environment makes empty container-capacity management important and challenging. Carriers usually face two types of demands from forwarders/shippers with long-term contracts and from the spot market. Empty container-capacity planning and allocation are based on demand information from forwarders and the spot market. In this paper, we focus on the empty container-quantity decision problem over one planning horizon of multiple schedules, each with a random demand. The carrier builds empty container capacity with its own containers and leased containers. We construct a stochastic dynamic program model to maximize the profit of the carrier. The objective function is shown to be concave in empty container quantity. We can also formulate a static model and a myopic model. We run simulations by assuming that demand follow colored and white Gaussian Noise processes, we observe that the optimal empty container quantity using the static model is identical or close to identical to that from the dynamic model, while the optimal empty container quantity from the myopic model is always more than that from the dynamic model. Therefore, a simplified iteration algorithm utilizing the static and myopic models is developed to obtain the optimal dynamic solution efficiently. Numerical experiments show that the proposed algorithm is effective.

We construct an analysis framework consisting of the central government, a local government, a representative firm, and consumers. This study analyzes how the local government's enforcement, the firm's compliance, and their interaction influence the effectiveness of regulation after the central government has established policies regarding quality standards. We construct three scenarios: perfect enforcement, imperfect enforcement, and collusion. We show that when the local government imperfectly enforces the regulation, the firm's utility and the local government's utility are higher, whereas the degree of the firm's compliance, consumers' utility, and the level of social welfare are lower. When there is collusion between the local government and the firm, the firm's utility and the local government's utility are the highest, but the degree of the firm's compliance, consumers' utility, and the level of social welfare are the lowest among the different scenarios. This study proves that the behavior of governments and firms plays a vital role in the effectiveness of quality standards regulation.

During the past few years, the market for organic food has been experiencing rapid growth. However, the market demand for organic food typically fluctuates due to its seasonal nature and customized characteristics, and it remains fairly difficult to precisely forecast market demand prior to the selling season. Forecast bias usually creates inefficiency in an organic food producer’s production plan and results in a substantial amount of waste. Thus, this paper studies how much an organic food producer is likely to lose with a certain level of forecast bias and investigates whether forecast bias necessarily results in an improper production plan. Finally, we calculate the maximum potential profit loss rate when the organic food producer determines how much to produce based on his forecasted demand, which we believe will be instructive for organic food producers in making production decisions. The target problem is formulated by a newsvendor model and solved using a tolerant analysis approach. We find that an organic food producer can still find the optimal solution only if his forecast bias is under a certain threshold. However, if the organic food producer’s forecast bias is beyond the threshold, he will probably make a sub-optimal production decision and potentially experience a profit loss. Subsequently, we analytically calculate an organic producer’s maximum potential profit loss rate for any given level of forecast bias. Examples are employed to numerically illustrate the main findings.

This paper studies the risks in demand information sharing applications by electronic soft-orders using electronic data interchange (EDI) systems in e-commerce and aims to suggest a sustainable regulation mechanism with a trust-embedded contract. In a supply chain with one retailer and one supplier, the retailer solicits private forecasted demand and places soft-orders via EDI to the supplier. To ensure abundant supply, the retailer has an incentive to inflate her soft-orders, which potentially harms the credible information sharing and sustainability of business cooperation. Normally, the degree to which the supplier relies on the retailer’s order information is specified by trust, which is evaluated according to the retailer’s reputation and supplier’s intuition in this study. Based on standard game theory, we find that both the retailer’s order and the quantity of supplier prepared materials are independent of the retailer’s forecast. Therefore, EDI based information sharing in e-commerce without a regulation mechanism leads to inefficient demand information sharing. Since both the supplier and retailer are proved to faces huge of potential profit losses due to the failure of information sharing, the commerce by EDI based information sharing is full of risk and unsustainable. Therefore, a regulation mechanism that leaded by the retailer is proposed to establish ‘win-win’ sustainable cooperation. Numerical experiments highlight the value of trust, the impact of reputation and intuition in decisions, and the effectiveness of the regulation mechanism by a cost-sharing contract.

Trust potentially affects the decision-makers’ behaviors and has a great influence on supply chain performances. We study the information sharing process considering trust in a two-tier supply chain with one upstream agent and two retailers, where the agent recommends ordered quantities (ROQ) to retailers and the retailer decides her/his ordered quantities according to the agent’s recommendation and self-collected information. There exist three types of information sharing patterns among the agent and two retailers, i.e., both retailers share their demand prediction (Pattern 1), one retailer shares her/his demand prediction (Pattern 2) and none of the retailers share their demand prediction (Pattern 3). Thus, we build corresponding mathematical models and analyze each party’s decision strategies in each pattern, respectively. The findings in this study show that sharing information can generally promote trust among enterprises in the entire supply chain and increase their profits in return. It is found that when the accuracies of the two retailers’ predicted demand differs, their behaviors of information sharing or not sharing significantly affect their expected profits. In Pattern 1 and Pattern 3, we find that retailers’ expected profits are negatively influenced by the agent’s accuracies of demand prediction. However, the retailer’s expected profits are positively linked to the agent’s accuracies of demand in Pattern 2. Consequently, we propose a series of strategies for retailers in different decision patterns after several simulation runs. In addition, we also find that the retailer whose prediction is less accurate can also gain more profits by un-sharing his/her demand prediction when the agent’s predict accuracy is between the two retailers.

This paper considers a feasible incentive contract between a manufacturer and a fairness-sensitive retailer. The manufacturer (he) dominates the supply chain and determines his wholesale price, while the retailer (she) focuses on marketing and retailing. Thus, the retailer’s decision concerns her marketing efforts and retail price. The market demand is linked directly to the retailer’s marketing efforts and retail price. Therefore, we find that the retailer’s fairness preference leads her to engage in high-level marketing efforts, but causes the manufacturer to set a low wholesale price. A strategic decision-making approach that the manufacturer can employ is to consider the retailer’s fairness sensitivity. We also find that the retailer’s concern for fairness influences the manufacturer’s decisions strongly and affects his expected profit negatively. The manufacturer dominates the supply chain, thereby motivating him to design a feasible incentive contract to maximize his expected profit. Thus, a fairness-embedded profit-sharing contract applied with a Nash bargaining process is proposed to maximize the manufacturer’s expected profit. Both mathematical derivations and numerical studies show that the incentive contract leads to Pareto improvement in the utilities of the manufacturer and the retailer.

This study investigates the effects of overconfidence on a Cournot competition subject to yield uncertainty. We consider one of two firms to be overconfident, whereas the other is completely rational and derive the Nash equilibrium to compare with that when both firms are completely rational. Through this comparison and analysis, we establish that (i) the relationship between a firm's overconfidence and the likelihood of that firm developing a monopoly in the market is positive; (ii) a rational firm always suffers a loss because of its competitor's overconfidence in a Cournot competition; and (iii) an overconfident firm does not benefit constantly from its overconfidence, although overconfidence results in permanent, increased, and more aggressive market sharing in competitions.
