Environmental sustainability analyses of end-to-end food supply chain (SC) operations need to be performed regularly to accommodate reconfiguration opportunities arising in the global business landscape. This research scrutinises the pertinent literature and identifies the challenges of data availability, data obsolescence, computational complexity, and data specificity that associate to well-established environmental assessment methodologies, and proposes a stepwise approach that considers key players and processes for generating “close to real-time snapshots” of the main environmental hotspots for the focus firm. The applicability of the proposed systematic approach is demonstrated via an implementation at a resource-intensive sector of significant scale, i.e., the UK poultry industry. Overall, this research contributes to the SC environmental sustainability management domain by guiding the mapping and identification of environmental hotspots across end-to-end networks of operations in the form of a stepwise framework, and through articulating several research propositions.

Technological advances result in new traceability configurations that, however, cannot always secure transparency and food safety. Even in cases where a system guarantees transparency, the actual consumer involvement and a real consumer-based perspective cannot always be ensured. The importance of such consumer centricity is vital, since it is strongly associated with effective supply chains that properly fulfil their end-users’ needs and requests. Thus, the objective of this paper was to explore the level of consumer centricity in food supply chains under a traceability system. The methodological approach employed a framework of two studies validating subsequently a similar set of variables, using initially consumers data and then supply chain actors data. The supply chain of sustainable tomato was selected to design the studies. The level of agreement between datasets suggested the level of the supply chain consumer centricity. Findings showed health, trust, quality, nutrition, and safety-related values to be significant for the consumers towards accepting a traceability system. The supply chain actors also accepted a traceability system based on the fact that their customers’ needs rely on the exact same beliefs, indicating a high level of consumer centricity. The current work underlines the magnitude of consumer centricity in food supply chains and provides an easy and straightforward framework for its exploration. Key implications suggest the design of more effective supply chain and consumer-based strategies for the food industry. Policymakers could also adopt the concept of consumer centricity to further improve the food industry.

Sustainable food supply chains are complex systems involving several stakeholders, processes, flow of goods/materials and information. The value generated in combination with the contradictory agendas among actors makes any groundwork for future research a challenging endeavor. Hence, an end-to-end mapping of the food supply chain under examination is a vital prerequisite for the design of a comprehensive research framework. This study exemplified such a mapping approach in the Greek sustainable tomato supply chain, providing significant insights for an impactful research agenda. Data were obtained from secondary sectoral sources and open interviews with key players across the supply chain—covering all its main stages, i.e., production, packaging, storing, transportation, wholesaling, and retailing. The findings are summarized in three supply chain maps that illustrate the areas concerning sustainability, value chain and stakeholders. These maps synthesize a bigger picture of the supply chain that reveals the complicated interactions among its actors, the hidden bottlenecks in the flow of information and the areas that need deeper exploration. Its fundamental implication is the design of a targeted research framework, underlying the main priorities of the Greek tomato supply chain and eventually the Greek agri-food sector.

Resource efficiency in the agri-food sector is a global urgent issue considering the urbanisation phenomena, the increased nutritional needs, and the emergence of diversified dietary norms. Despite the ongoing progress in digital technologies that could enable resource-efficient operations in the sector, their effectiveness—even in developed countries—remains debateable mainly due to the limited understanding that further impedes their adoption by farmers. Among others, ease of access, training, and engagement with digital technologies appears to be challenging for most stakeholders, especially during the production (farming) stage. Specifically, in developing countries, that often encounter major natural resources challenges, the diverse socio-cultural background of the farmers hinders the adoption of digital technologies to perform highly automated and efficient agricultural operations for ensuring sustainability output. In this regard, we explore publicly available data sources (i.e., institutional reports, databases) to identify key challenges in adopting digital technologies for efficient resource use from a systems-level perspective. Thereafter, we map the determinant factors using the System Dynamics methodology in order to identify areas of interventions to limit natural resources’ appropriation and support agri-food sustainability.

The purpose of this research is to introduce a qualitative sustainability performance assessment framework for food supply networks, based on the perception of their key stakeholders’ upper management. Moreover, the paper provides industry insights by exemplifying the value of the proposed framework for the UK food industry. A critical review on the most acknowledged sustainability assessment methodologies and tools resulted in the synthesis of the proposed framework. An illustrative application follows, based on data from semi-structured interviews with C-level executives from key players of the UK poultry sector. The results demonstrate an easy-to-use approach, with a comprehensive and sharp outcome on supply chain sustainability performance assessment. Industry insights demonstrate an adequate sustainability performance with respect to the entire supply chain. A detailed view on different echelons reveals specific areas that could be improved, such as the environmental performance at both farming (production) and processing levels. This work extends the scope of current sustainability performance assessment tools by providing a tangible triple bottom-line overview, as well as echelon-specific and indicator-specific details, in a user-friendly, yet straightforward, way. UK food industry insights are valuable for practitioners and academics. The illustration is based exclusively on C-level executives’ viewpoint; thus, any generalization of the results should be considered to this effect. Supply chain stakeholders, policy-makers, and researchers could perform a quick and reliable supply network sustainability performance assessment.

The current study aims to explore consumer attitudes and preferences towards alternative food distribution channels focusing mainly on fresh fruits and vegetables. Consumer behavior towards alternative channels and various factors affecting purchasing decision are investigated and recorded, demonstrating the value of alternative channels in distributing agro-food products. Results manifest alternative channels are trusted by the consumers and they can be expanded particularly for fresh fruits and vegetables.

The main objective of this research is to determine and describe what constitutes an alternative distribution channel for raw food products by exploring the relative literature and the practices. Alternative food channels cover an extend of channels that are depending on the local conditions and the type of agricultural distributed products. Several factors influence consumers attitudes towards alternative charnels and they are recorded. Generally consumers tend to show a preference towards alternative charnels over the last years particularly for fresh fruits and vegetables.

Fresh fruits and vegetables constitute the basis of many people's daily nutrition habits and different distribution systems have been developed to cover daily supply needs. Important components of alternative distribution channels among others are high quality, high standards and consumer-producer trust. Although numerous studies have been conducted on alternative types of distribution channels, there is a lack of research on consumer behaviour towards these ways of distribution. The aim of this article is to identify consumer attitudes and preferences towards alternative agricultural distribution channels regarding fresh fruits and vegetables. In addition, this article contributes to the understanding of consumer behaviour, by pointing out the factors that affect the final purchase of agricultural products.

Purpose – This paper aims to report research into emergent supply chain management (SCM) practices in a context in which the imperative for business development requires efficient inter-firm collaboration. It explores the way key supply chain (SC) actors perceive entrepreneurial opportunities and evaluates their SC processes. Design/methodology/approach – A whole chain approach, using qualitative methods, was used to investigate retail, wholesale and production links, with a special focus on small businesses which predominate in the agrifood sector. The methodology used is of vital importance to understand the complexity of the sector and the interdependencies among stakeholders. Findings – Results suggest several SC malfunctions originating in diverse strategic planning practices and different entrepreneurial mentalities which hinder the process of emergence from traditional to more modern chain configurations. The fact that the nature of new opportunities in the agrifood sector (e.g. organics) was poorly understood, obstructs further development of the agrifood sector. Other key findings suggest problematic flows of information within the SC and minimal trust among stakeholders. Research limitations/implications – Sampling constraints suggest that caution should be exercised in extrapolating these conclusions elsewhere. Nonetheless, further investigation using similar approach should be applied in a wider context not only in Greece but also in other similar economies characterized by nascent SCs. Originality/value – The study investigates the entire SC of a vital sector for numerous small- and medium-sized enterprises, with lessons for diverse emerging agribusiness economies. Insights, not only for the direct SC stakeholders but also for policymakers, could serve to unlock the potential of such sectors and also the exploitation of new opportunities in emerging markets which can be stifled by stagnant sectoral structures and conservative business attitudes.

The need for wastewater usage is increasing, especially in coastal regions with limited freshwater supply. In Greece, the only applications of water reuse projects concern irrigation purposes in the agricultural sector. One of the key issues concerning the adaptation of such projects and further expansion of such initiatives is consumer perceptions. To that end, the aim of this chapter is to explore consumer awareness about the reuse of wastewater for agricultural purposes in order to accept such policies. The study reveals a positive attitude of the public towards recycled water reuse in agriculture. Education is positively correlated with higher awareness regarding agricultural and landscape irrigation. However, the study reveals several obstacles for a wider acceptance of similar practices, especially for older people.
