This study is based on the general notion that restaurants should find more responsible solutions to dispose of the large amount of food that is not consumed. Moreover, the food wasted has great environmental, social and financial impacts, and yet this issue is still insufficiently presented in contemporary studies on food waste management. This paper applied the extended theory of planned behavior as a theoretical framework to elicit consumers’ behavior concerning food waste. A standard paper and pen survey recorded quantitative data provided by 221 respondents. The findings reported the following: (1) personal attitudes toward food waste positively affect an individual’s intention not to waste food; (2) perceived behavioral control positively affects an individual’s intention not to waste food; (3) the intention not to waste food negatively affects self-reported food waste behavior; (4) negative environmental attitudes negatively affect intention not to waste food; (5) hygiene-based food waste negatively affects perceived behavioral control. This study contributes to understanding consumers’ food waste behavior in restaurants and might have practical implications in the hospitality sector.

Beer may not be the oldest alcoholic beverage, but it is definitely among the most popular alcoholic beverages in Serbia today. The authors conducted a survey in 2019, during three major beer festivals, on a total sample of 542 festival visitors. The authors set the goal of the research: sensory preferences, habits, knowledge of the beer production process and a healthy lifestyle influence the choice of beer type, in respondents older than 18 years. Further, the goal was to investigate the extent to which craft tourism can be developed in Serbia, and to be an aid in sustainable tourism development. SPSS software, version 26.00, was used for data processing. Descriptive statistical analysis determined the average values for all items from the given research groups. The authors considered that, for determining the group of factors, which may have the strongest predictor power in predicting beer choice, the best results can be given by Binary Logistic Regression. The logarithm of chances, chances and probabilities has also been determined whether in some future period all festival visitors over the age of 18 will be chosen for craft beer instead of factory beer. The obtained results show that visitors mainly consume craft beer, and that sensory tendencies play a leading role in preserving and creating quality, as well as attracting regular consumers and visitors to craft tourism. The importance of the research is undoubtedly seen in resolving the existing doubts about the quality of beer and creating a craft tourist market in Serbia. In addition, the research can improve the measures around the creation of a recognizable identity of the Serbian beer festival, on the wider tourist market.

Employee satisfaction is the main factor achieving high work performance, providing quality services in the tourism sector, which directly affects the increase in productivity and commitment to the organization. The research is focused on determining the factors of job satisfaction and commitment to the institution by the female workforce. The authors conducted a survey in tourism companies in Novi Sad (the second-largest city in Serbia), based on a sample of 610 women in total, using a standardized MSQ questionnaire for job satisfaction, and Meyer and Allen’s organizational commitment scale. Three multiple regression analyses were used to determine the relationship between job satisfaction factors and organizational commitment factors. The results confirm the existence and strength of correlation between satisfaction factors and types of organizational commitment, and the fact that the position of women in the tourism sector is not at an enviable level, and that they remain in the same organization because of the small number of alternatives and moral obligations.

Sustainable development is in many ways the fundamental basis of tourism. The importance and role of sustainable tourism development in the 21st century is at the center of this paper on eco-certificates and green procurement in the hotel industry, within the field of the responsible or green economy. The green hotel economy implies the selection of accommodation in environmentally responsible hotels and other facilities, which are directing their business operations towards green procurement, eco-labeling, and the responsible economy. This paper includes quantitative research of the attitudes of 506 international tourists, who expressed their views on their needs regarding eco-hotels and the green economy in the hotel industry. This research also included the collection of data on green (responsible) businesses by surveying 100 hotels situated in the capitals of southern Europe. Comparing results from hotels with the needs of tourists in terms of the green economy in the hotel industry, significant results were obtained that contribute to sustainable tourism development.

Local marketplaces and street vendors represent an important segment of trade in a community and one of the initiators of the rural and peri-urban development. Agricultural and other products available at marketplaces and street vendors very often originate from a wider urban surrounding or nearby villages, so both are also an important factor of the daily migrations, exchange of goods, services, and money on the relation suburb-downtown and village-town/city. This study aims to analyze the social segments of the organization and operation of marketplaces, to provide an insight into the contemporary market processes and decision-making, and also to illustrate the future tendencies of the market outcomes of this aspect of the business. Using qualitative data processing, the results of one of the first empirical research on this topic in Serbia and this part of Europe will be analyzed. The results will show the economic, social, and cultural impact that marketplaces have on people’s everyday life and the economy of Serbia, along with defining future development guidelines. Besides, the findings of this research may be used by local authorities, the economy, and communities for future strategic development planning of this market segment. The outcomes may have an impact on future research of other aspects of marketplaces depending on the difference of regions, on one side, and also alternative opportunities for local development in less-advantaged communities, on the other side. Moreover, this contributes to the identification of the differences in the marketplace business management and sheds light on future initiatives for the encouragement of this local/global process.

In the last decades, the wellness industry has experienced a real economic boom worldwide. Wellness centres within hotel complexes have become one of the most important components in the development of the leisure industry. Aside from the standard offering that wellness centres include (hydrotherapy, cosmetic treatments, massage, fitness, meditation, nutritive balanced menus, etc.), one of the frequently neglected functions of wellness centres is certainly their educational nature—the spreading of the wellness philosophy with an accent on a healthy lifestyle. Such a holistic approach of applying the wellness concept can have a positive impact on the subjective feeling of well-being among the visitors of wellness centres. Wellness tourism, and wellness as a lifestyle, are certainly a part of modern trends that hotels have to adjust to for the sake of financial success and the achievement of competitive advantage in the market. Thus, a critical approach to the literature in this field would represent a useful theoretical base, both for the managers of hotels and for their customers. The results could be of interest to all stakeholders in the hotel and leisure businesses, since they could be applied when setting future standards in the fields of the leisure industry and wellness tourism.

Community-based tourism, as an evolving approach to sustainable tourism planning, aims to provide economic, social, cultural and environmental advantages to community members while enhancing sustainable principles at the local level. Integrating tourism activities, sustainability mechanisms, and the well-being of rural communities provides the focus for our work. We use a Serbian case study to showcase the link between rural community welfare and sustainable tourism development. An empirically estimated Tourism Impact Attitude Scale (TIAS) is analysed using factor analysis. Results suggest that the TIAS can be grouped into four factors that include (1) personal and community benefits of tourism, (2) negative tourism effects, (3) support for local tourism development and (4) general tourism perceptions. These four factors explained just over 41% of the variance. Furthermore, ANOVA results suggest that rural resident perceptions of tourism development are significantly different depending on employment in tourism-related jobs, average monthly incomes, and perceptions of community growth. This chapter reinforces the idea that the sensitivity to local resident perceptions plays a vital role in connecting community well-being with sustainable tourism development.

Population changes of the Russians and other Slavs are an important original indicator of demographic, economic, political, and cultural analysis of over 300 million Slavic inhabitants in Central, Eastern, and Southeastern Europe. The indicators are conditioned by the large number of people executed in World War I and World War II, significant economic migrations, the disintegration of the Soviet Union, Yugoslavia, and Czechoslovakia. Utilizing data from official reports, the authors proceed to analyze the demographic tendencies in order to find out the relationship between modern demographic trends and political and economic events over the past years. The results showed that economic and demographic stagnation, which favor religious and national (ethnic) ambivalence, influence the strengthening of groups ethnically isolated or religiously differentiated in the observed macroregions of Eurasia. The contemporary challenges of modern society in terms of global politics (e.g. terrorism and migrations) will be more pronounced and turbulent in these areas. For these reasons, the original data represent an important segment of the study of Slavic history, demography, and politics throughout the turbulent 20th century and the beginning of the new millennium.

The paper analyzes the water quality of hydrological resources in the wider area of Tara National Park (NP Tara) in Serbia and the opinions of the local community and the national park visitors about the grade of the possible damage. The pollution level of the Drina River at the Bajina Bašta hydrological station was analyzed using the Water Pollution Index. The results showed that water quality corresponded to classes II (clean water) or III (moderately polluted water) and revealed the presence of organic pollution. In addition, using a survey combined with field research, the perceptions of local inhabitants and national park visitors related to environmental pollution were analyzed. The community believed that tourism does not cause significant damage to the environment. However, the older and more educated groups of residents and visitors had a more critical perception of the environmental impact of tourism. The results also indicated that the perceptions of visitors were mostly in agreement with measured water quality in the Drina River. The findings of this study have important implications for the management of protected areas and future policies related to national parks.

Currently, there is a global pandemic of COVID-19. To assess its prevalence, it is necessary to have adequate models that allow real-time modeling of the impact of various quarantine measures by the state. The SIR model, which is implemented using a multi-agent system based on mobile cellular automata, was improved. The paper suggests ways to improve the rules of the interaction and behavior of agents. Methods of comparing the parameters of the SIR model with real geographical, social and medical indicators have been developed. That allows the modeling of the spatial distribution of COVID-19 as a single location and as the whole country consisting of individual regions that interact with each other by transport, taking into account factors such as public transport, supermarkets, schools, universities, gyms, churches, parks. The developed model also allows us to assess the impact of quarantine, restrictions on transport connections between regions, to take into account such factors as the incubation period, the mask regime, maintaining a safe distance between people, and so on. A number of experiments were conducted in the work, which made it possible to assess both the impact of individual measures to stop the pandemic and their comprehensive application. A method of comparing computer-time and dynamic parameters of the model with real data is proposed, which allowed assessing the effectiveness of the government in stopping the pandemic in the Chernivtsi region, Ukraine. A simulation of the pandemic spread in countries such as Slovakia, Turkey and Serbia was also conducted. The calculations showed the high-accuracy matching of the forecast model with real data.

The impact of solar activity on environmental processes is difficult to understand and complex for empirical modeling. This study aimed to establish forecast models of the meteorological conditions in the forest fire areas based on the solar activity parameters applying the neural networks approach. During July and August 2018, severe forest fires simultaneously occurred in the State of California (USA), Portugal, and Greece. Air temperature and humidity data together with solar parameters (integral flux of solar protons, differential electron flux and proton flux, solar wind plasma parameters, and solar radio flux at 10.7 cm data) were used in long short-term memory (LSTM) recurrent neural network ensembles. It is found that solar activity mostly affects the humidity for two stations in California and Portugal (an increase in the integral flux of solar protons of > 30 MeV by 10% increases the humidity by 3.25%, 1.65%, and 1.57%, respectively). Furthermore, an increase in air temperature of 10% increases the humidity by 2.55%, 2.01%, and 0.26%, respectively. It is shown that temperature is less sensitive to changes in solar parameters but depends on previous conditions (previous increase of 10% increases the current temperature by 0.75%, 0.34%, and 0.33%, respectively). Humidity in Greece is mostly impacted by solar flux F10.7 cm and previous values of humidity. An increase in these factors by 10% will lead to a decrease in the humidity of 3.89% or an increase of 1.31%, while air temperature mostly depends on ion temperature. If this factor increases by 10%, it will lead to air temperature rising by 0.42%.

All over the globe, outdoor sports events are highly affected by weather conditions that frequently influence the comfort of the players and sports fans, the duration, or even the cancelation of the event. To verify the range of weather-induced impacts on selected Major League Baseball events, this interdisciplinary study investigated the causes of unexpected postponements of several Major League Baseball games in March and April 2018, according to official weather reports in the event host destinations. The impact was measured by a recurrent neural network with long short-term memory as an investigation model. Autocorrelation analysis was conducted between all input and target fields. The research focused on the explanation of the influence of weather risks on the event host destinations. Moreover, the study is based on projecting an effective instrument for managing weather risks and then evaluating the tourism services that the future climatic conditions will support. The long short-term memory analysis revealed that solar activity had the greatest influence on the temperature. On the other hand, humidity and air pressure depended very little on solar activity; this finding was confirmed by the zero values of the sensitivity. These values encourage further research on weather disturbances and their connections with outdoor sports and tourism activities.

A crisis caused by COVID-19 pandemic affected the whole world leaving long-lasting effects on almost every aspect of human lives. The aim of this study was to test how different effects of COVID-19, expressed through job insecurity, employees' health complaints occurred during isolation, risk-taking behavior at workplace and changes in the organization, may impact work-related attitudes (job motivation and job satisfaction) and turnover intentions of the employees in hospitality industry. Based on the data collected from 624 hospitality workers from Serbia, the results indicated that job insecurity and changes in the organization were predictors of all outcomes, in a negative direction, while risk-taking behavior acted as a predictor of job satisfaction only, also in a negative direction. The significance of demographic characteristics, as control variables, showed that age and marital status had significant impact on job motivation and turnover intentions. The theoretical and practical implications were discussed.

Rural tourism is often considered to be a factor in the development tendencies of rural space, a factor in the development of agriculture, as well as a factor in reducing rural depopulation. The primary aim of the research was to look at the problems in financing sustainable rural tourism in the case study of Serbia. The secondary one was to analyze the factors that may influence the self-financing capacity of rural tourism service providers. The findings confirmed the main hypothesis that financial resources are a significant limitation of the development of sustainable rural tourism. It was found that there is a high correlation between the amount of income generated and the structure of the workforce. The results verified that rural tourism entities were not making sufficient investments due to lack of financial resources, i.e., adequate financing modalities. It can be concluded thatin order to develop sustainable rural tourism, financial investments are needed, both at the level of service providers and at the macro level.

Purpose The purpose of this study is to examine the impact of the use of Quick Response (QR) code application among the tourists on their satisfaction at a destination regarding information about restaurants’ offer. Design/methodology/approach A quantitative method was implemented in this study. The field study was conducted in 2019 in the two most visited urban destinations in Serbia. The proposed model was examined using partial least squares, and the model fits, composite reliability and convergent validity were assessed. The direction and significance of the relationships were determined by testing all of the hypotheses. Findings The results showed that there was a positive effect of using QR codes. However, the study showed that a QR code cannot completely affect the overall satisfaction at a destination. The analysis of the control variables (age and economic status) showed that individual, demographic and economic factors must be taken into consideration to predict individuals’ behaviour. Research limitations/implications To enable the generalization of the results, it is advised to conduct research on cross-cultural levels. Future studies related to the topic could be conveyed in other forms of tourism, as well as in other industries, which would provide a better insight into the application of this technology in the future. Originality/value The study enables managers of tourism businesses, especially in hospitality, to better understand the importance of the use of a QR code at a destination as an important marketing tool for getting information, and thus to satisfy guests’ expectations.
