Israel S. Afolabi is a Professor of Nutritional Biochemistry and Phytomedicine. He has great passion for cutting edge and ground breaking researches that are focused on solving challenges with direct influence on the health of humanity. His current research interest focuses on food quality; spoilage and preservation; and harnessing the nutrients and health benefits of underutilized bio-resources. He specializes in using fermentation and other food processing technique to bio-transform under-utilised plant resources into useful bio-resources, so as to harness the potentials and to enhance the bioavailability of their nutrients for improving human health.
