Dr. José Manuel Moreno-Rojas is the Head of the Department of Food Science and Health, Institute of Agricultural Research and Training (IFAPA) Cordoba, Spain. He completed his PhD studies in Food Science at the University of Cordoba (Spain). He serves as a Coordinator at Laboratorio de Isótopos Estables y Espectrometría de Masas (LISEEM) at the IFAPA center in Cordoba, focusing on three main lines of research: 1. characterization of volatile compounds in food; 2. nutritional characterization of foods and their impact on health; 3. use of stable isotopes for food traceability.
