Fulvio Mattivi’s main research activities concern food chemistry, investigating different classes of polyphenols from the analytical, technological and nutritional point of view.
More recently, his research interests have been directed towards plant biochemistry and mass spectrometry-based metabolomics, and he is now coordinating biochemical studies in the fields of plant, animal and nutritional metabolomics.
