Dr. Pedro Ferreira Santos is a Biotechnological Engineer with a Ph.D. in Food Science and Technology and Nutrition. He is a researcher at the University of Vigo (Spain) and a teacher in several disciplines of food science and industrial engineering. His scientific activity is related to (i) extraction and purification of bio-based molecules obtained from plants, agri-food by-products, and algae using intensified green processes; (ii) chemical, functional, and structural characterization of isolated molecules; (iii) in vitro, in silico, and in vivo bioaccessibility, mechanisms of action, and bioactive potential; and (iv) assessment of nutritional and technological aspects related to the development of functional foods and nutraceuticals.
