Clara Talens obtained her Ph.D. in Food Science, Technology, and Management from the Universitat Politècnica de València, Spain. She works as a senior researcher at AZTI. She has more than 15 years of experience in the fields of upcycled ingredients, rational food design, processing technologies, sustainable nutrition, and consumer-driven product development. She is contributing to these fields in scientific publications and oral conferences, assessing food prototyping and industrial scale-up in pilot plants and industrial facilities, and capturing public funds for promoting innovation in SMEs and start-ups.
