Carole Ayoub Moubareck received a PhD from Paris Descartes University in microbiology and pursued a post-doctoral fellowship in the Institut Pasteur of France in immunology. She was the associate director of the National Reference Center of Antibiotics in France from 2007 to 2009. Between 2010 and 2013, she worked as Assistant Professor in Saint Joseph University in Lebanon. Since 2014, she has worked at Zayed University in the United Arab Emirates as an Associate Professor. Her research interests are in controlling infectious diseases by monitoring the spread of antibiotic-resistant bacteria and characterizing resistance mechanisms. She is also interested in food security and is examining the potential for recycling organic materials into compost. Another part of her research is about the intestinal microbiota and its implication in obesity and necrotizing enterocolitis. Since feeding significantly affects intestinal colonization in preterm infants, she is analyzing human-milk microbiota.
