El turismo religioso es uno de los tipos de turismo más antiguos de la historia, así mismo, peregrinar fue uno de los primeros desplazamientos con fines no económicos que realizó el ser humano (Duda & Doburzyński, 2019). Es conocido como una forma de expresión o tradición cultural, un objetivo espiritual o un compromiso de fe. La presente investigación da cuenta del impacto y la transformación espiritual que experimentan los turistas al emprender el Camino Ignaciano como un itinerario turístico y religioso. El estudio se realizó mediante análisis cualitativo y codificación de entrevistas aplicadas durante la peregrinación. Se analizaron 95 entrevistas semiestructuradas en la modalidad de 12, 16 y 30 días de peregrinación entre el 2015 y 2019. Ignacio de Loyola sufrió gran parte de su conversión en medio de una peregrinación que emprendió desde Loyola hasta Manresa, recorriendo más de 640 km. Al llegar a Manresa una de sus mayores obras dio fruto, la que hoy en día es base de la espiritualidad ignaciana alrededor del mundo y piedra angular del peregrinaje, los ejercicios espirituales. Esta obra se fundamenta en el discernimiento y la entrega a Dios para descubrir el secreto de una vida en plenitud. La peregrinación, en definitiva, es una actividad de turismo religioso que hace parte del turismo cultural y que muy a pesar de sus erróneas atribuciones negativas, el turismo, desde sus diferentes especialidades, está contribuyendo a la transformación espiritual de jóvenes y adultos, rescatando vidas desde una de sus prácticas más antiguas, el peregrinaje.

Purpose: this article presents a conceptual framework for examining community tourism as a sustainable livelihood through food tourism, considering the significant increase in community-based tourism in Mexico and the impact this activity has on rural and vulnerable destinations. The main aim of this research is to generate a proposal for a set of sustainable tourism indicators for rural and isolated communities through food strategies geared towards tourism development. Methodology: this information can then be used to generate a first list of indicators for creating and evaluating community tourism proposals in a region. Said theoretical list includes four dimensions (socio-cultural, environmental, tourist, and economic), which comprise 27 indicators in total. Findings: the results, validated by different participants related to the tourism sector, show that a lack of information for quantifying indicators is one of the main limitations when evaluating a vulnerable destination and that participation by the private sector and public administrations will be essential in generating these data. Approach: this research will therefore contribute to the development of new action strategies that allow not only the strengthening of the current localized agri-food systems, but also the revaluation of forgotten food systems.

UNESCO World Heritage Sites (WHSs) must necessarily display Outstanding Universal Values (OUVs), as these play a vital role in constructing competitive brand personality (BP) in tourism marketing. However, how these WHS qualities are perceived by visitors still needs substantial investigation. Adopting a visitor-driven approach, this study seeks to explore the intangible attributes of WHSs and, for the first time, uses the BP concept to measure these attributes in cultural attractions. To investigate how visitors perceive WHS personality traits, 5579 visitor-generated reviews of 175 French (39), German (44), Italian (50), and Spanish (42) cultural WHSs on TripAdvisor were analysed using empirical, mixed methods. Results show that four personality dimension categories can be attributed to WHSs: Sophistication, Sincerity, Competence, and Excitement. Moreover, a novel BP lexical technique is presented along with a 222-item personality trait dictionary, which can be used to measure personality traits in cultural attractions. Theoretical and practical implications of the study are also discussed.

Sánchez Sánchez and Fernández Herreira raise a reflection on the three dimensions of peace: form a personal dimension and the spiritual sphere, from a social dimension, and form an environmental-natural dimension. Tourism can play a fundamental role as a tool for establishing ties with oneself and with other people to contribute to the development of peace. In this chapter, authors propose to study the different dimensions of the concept of peace by studying the project of Trails for Peace, a project born as a non-profit social entrepreneurial project that integrates different routes around the world that have a special significance for their relationship with some conflict areas. Trails help travelers to know the natural areas and to build inner peace through various spiritual activities. The project helps to promote the welfare of people by involving local communities to foster contact between visitors and tourists and sustainable development. This chapter aims to analyse the impact the project has on the areas where these paths have been developed.

Religious heritage sites are defined by their nature, both religious and non-religious (historical, social, cultural, etc.), as being pilgrimage destinations, as well as tourist attractions. The main aim of this paper is to determine whether there is a relationship between tourism accessibility and the concept of spiritual sustainability. Spiritual sustainability is presented in the paper by analyzing the concept of a sacred place and the connection it may have with tourism development. The authors have attempted to distinguish the elements determining the tourist and religious (spiritual) attractiveness of several pilgrimage sites as destinations for religious tourism, proposing a model for analyzing the connection between the two concepts studied. Two European regions have been compared—Pomerania (Poland) and Catalonia (Spain)—by analyzing 30 sacred sites (15 per region) using a combination of qualitative and quantitative research methods. The results show that a lack of accessibility positively affects the spiritual sustainability of the sites. In other cases, the impact that accessibility can have depends on the management system.

Contemporary architecture has become a prominent tourist attraction, and even the main motivation for a trip. This paper analyzes guided tourists' space–time behavior in heritage sites and compares the results with the behavior of nonguided tourists. Data from 127 guided visitors from 127 different local tours and 1,242 nonguided tourists visiting the historic town city of Girona (Spain) were gathered from participant observation, GPS tracking, and questionnaires. Findings demonstrate that guided tourists have a more qualitative experience (less walking time, more time spent visiting monuments, more information, and sometimes privileged information) than have nonguided tourists. Despite this, results also suggest that tourists who take guided tours, and those who do not, show a very similar behavior pattern.

The aim of this research is to determine the role played by a Michelin-starred restaurant, such as El Celler de Can Roca, in stimulating the creation and development of gastronomy tourism products. This research is qualitative and descriptive, using the method of indirect observation and in-depth interviews. It was found that the restaurant object of study contributes to stimulating the creation and development of gastronomy tourism products, since it was possible to identify components and characteristics in its activities, innovation process, discourse and philosophy that add quality to the products and services offered by gastronomy tourism. This study contributes to expanding research on Michelin-starred restaurants, which boost local economies through tourism and its effects, as well as leading to new ways of thinking about gastronomy, beyond the academic relevance of the subject, since haute cuisine restaurants attract little research outside the field of management.

This article analyses the role of monasteries as a sacred space and how their relationship with tourism depicts a landscape of 'good taste'. Monasteries are examples of both tangible and intangible heritage, and are highly symbolic built spaces that have often become the guardians of tradition. They are strongly embedded within a local cultural landscape, which has determined their historical evolution. Monasteries used to be self-sufficient communities that relied on the resources available in their local environment, e.g. they produced their own wine, which was essential for the celebration of the Eucharist; or they preserved food from their own produce. Gastronomy in monasteries can be a tool to improve tourists' visitor experience, in so far as it respects the values that these sacred spaces represent. This article explores the literature on monasteries as sacred spaces; the relationship between their tangible and intangible heritage attributes; and how monasteries and their heritage are linked to tourism. This is illustrated through examples from Spain.

El Celler de Can Roca restaurant in Girona, which is run by the three Roca brothers and was awarded three Michelin stars in November 2009, was named the best restaurant in the world in 2013 and 2015 by the British publication The Restaurant Magazine. However, the history of this restaurant dates back much further. Joan, Josep, and Jordi were raised in a family dedicated to the restaurant business. The three brothers grew up in the kitchen of the family-owned restaurant their parents still run today, learning the wide range of traditional Catalan recipes from their mother. This article presents the creative process followed by the three brothers and how this links tradition and innovation on the basis of 13 key elements: academia, memory, tradition, contrast, landscape, wine, chromaticism, product, audacity, magic, transversality, idealism, and sense of humor. The article demonstrates how the brothers articulate the discourse of the Celler de Can Roca menu, a veritable declaration of principles and philosophy rooted in the local region.
