Salvatore Vaccaro earned, from the University of Parma (Italy), a Ph.D. in Food Sciences (2022). He is now the clinical dietitian of the Clinical Nutrition Department and Oncological Metabolic Centre at the AUSL-IRCCS di Reggio Emilia. His work in clinical nutrition has resulted in several publications, presentations, lectures, and courses; memberships include SINU, SINPE, ADI, SINUC, SICOB, IFSO, and ISAK. His research interests include diet, lifestyle, anthropometry, human nutrition, clinical nutrition, artificial nutrition, obesity, bariatric surgery, and cancer.
