Since 2009, I have been a doctor of chemical sciences (Faculty of Chemistry, Jagiellonian University) and since 2010 a researcher at the Faculty of Food Technology, University of Agriculture in Krakow. In my research work, I deal with food chemistry. I am mainly interested in the physicochemistry of multiphase systems, especially liquid-gas systems (food foams) and liquid-solids (aqueous and non-aqueous solutions of biopolymers). The works related to biopolymers mainly concern the influence of soilless cultivation of plants and their biofortification on the physical and chemical properties of the main reserve material of plants, i.e. starch. In order to achieve the intended aims, I use many methods in my research, including: spectrometric methods (UV-VIS spectrophotometry, inductively coupled plasma optical emission spectrometry - ICPOES), chromatographic methods (high-performance liquid chromatography - HPLC, Gel permeation chromatography - GPC / size exclusion chromatography - SEC) as well as rheology, differential scanning calorimetry (DSC), microscopy, membrane osmometry and capillary viscometry.
