When channels of distribution change, consumer competences have to adapt. We define supermarket competence as the set of skills and knowledge that enables consumers to locate, evaluate, and choose among product offerings in a supermarket to fulfill their shopping goals. We develop a scale that measures three components of supermarket competence: finding and locating products, understanding and using packaging information, and interpreting prices. To test the structure and reliability of the scale, it is applied to three consumer samples in China. Supermarket competence is found to be related to shopping trip satisfaction, perceived shopping risk, and use of brand information. In addition, consumers with different levels of supermarket competence are found to differ in their demographic characteristics and in their shopping behavior. Policy implications for strengthening consumers' supermarket competence are discussed.

In recent years, measurement of quality of life has received increased attention. We use the satisfaction with life and subjective happiness scales in older adults living in urban areas in the Maule Region, Chile; generalized linear models are used (n = 396). We find that (1) gender is linked to satisfaction with life, (2) satisfaction with one’s own economic situation have significant effects on satisfaction with life and happiness, and (3) health, family and satisfaction with food are the most important predictors of both satisfaction with life and happiness.

Research interest in the acceptability of insects as food has dramatically grown in recent years. Investigators have studied the antecedents of people willingness to eat whole insects, processed (non-visible) insects, and insect-fed animals as well. Another important topic is the difference between intention to try insect-based foods once, and readiness to adopt these foods in everyday diet. In 2020, the Entomophagy Attitude Questionnaire has been developed as a tool for researchers in this area. It is the only one self-report questionnaire specific to entomophagy, multi-dimensional, and cross-validated in diverse contexts and languages. The current study contributes to further validate this instrument in Spanish, in a novel context such as Chile, and to expand its nomological validity to intention to eat processed insects. In addition, results show that the three components of the EAQ significantly predict participants’ intention to try insect-based foods and, to a lesser extent, intention to add insect-based food in one own’s diet. Limitations of the study, as well as direction for further research are discussed in the paper.

In order to achieve a better understanding of young consumers’ deselection of pork, the objective of the present study was to get insight into the influence of attitudes, perceived social norms, abilities, and other psychological factors on pork consumption among young consumers in Denmark and Sweden. Using data collected through questionnaire surveys within a Theory of Planned Behavior framework the study explored the extent to which different psychological factors influence young consumers’ intention to buy and consume pork. Multi-group structural equation modelling revealed that young Danish and Swedish consumers’ intention to buy pork and consumption of pork were primarily influenced by attitudes and habit strength, while social norms and perceived abilities played a minor role. The results further indicated that especially concerns about animals and the environment had a negative impact on attitudes towards pork. The results suggest that actors within the pork meat industry need to focus on both the attitudinal and habitual qualities in order to make effective strategies for food behavior change interventions.

Consumer behavior is crucial in the transition towards circular food systems. Studies so far investigate isolated circular food behaviors, but it is still unclear how the literature comprehensively addresses these behaviors. This paper provides an overview of the literature on circular food behaviors. Following a semi-systematic literature review, we analyze 46 papers related to circular food behaviors. We summarize their main features, categorize the behaviors, and propose a future research agenda. Results show the novelty and quick popularity of the topic, a dispersion across sustainability and agri-food journals, the manuscripts’ goals related to consumption, a predominance of empirical data collection in Europe, a focus on behaviors related to protein alternatives, food waste, and upcycled foods, and the importance of communication and consumers’ education. We categorize and characterize three types of circular food behaviors: linear, transitioning, and circular behaviors. Circular behaviors (i) are part of a systemic circular economy view, (ii) define consumers as “doers” or “prosumers”, (iii) pursue long-term sustainability goals, (iv) show a high engagement of skilled consumers, and (v) are supported by technologies. Future research should consider the social dimension of sustainability and pursue a systemic view of circular food behaviors. We suggest that a circular food-related lifestyle may incorporate the recommended directions.

Distribution systems for food can change quickly in emergent markets, requiring new competences for consumers, and even in some European countries we have seen considerable changes in the distribution system for food in recent decades, raising the question whether consumers have acquired corresponding competences. We take two Balkan countries, Albania and Kosovo, as a case in point and measure consumers’ competence in dealing with package and price information in supermarkets and how this affects their information search behavior and the outcome of their shopping trips in terms of shopping pleasure, shopping trip satisfaction, and perceived risk. Results from data collected in the two countries’ main cities, Pristina and Tirana, show that higher levels of competence lead to more information search and better shopping outcomes, but that information search in certain cases can also increase perceived risk and diminish pleasure and satisfaction. In addition, considerable differences in the two cities can be found, which can be linked to differences in their history.

Domestic food markets are of significant importance to Kosovar and Albanian companies because access to export markets is under-developed, partly as a result of the gaps in food safety and quality standards. Kosovar and Albanian consumers’ use of food safety attributes and their evaluation of the quality of domestic food versus imported food are the research objectives of this study. The paper is based on a structured consumer survey of 300 Kosovars and 349 Albanians analyzing their perceptions of issues related to food safety and quality, measured through two respective batteries of items using a 5-point Likert scale. We used the t-test to identify differences between populations, correlation analysis and the bootstrapping method. Despite the prevalent problems with food safety, consumers in both countries consider domestic food to be safer as well as of higher quality than imported products. Kosovars are more likely than Albanians to perceive domestic food products to be significantly better than imported products. Female and better educated consumers use information related to food safety more often. Expiry date, domestic and local origin, and brand reputation are the most frequently used safety and quality cues for both samples. International food standards such as ISO or HACCP are less frequently used as quality cues by these consumer groups. It is important to strengthen the institutional framework related to food safety and quality following best practices from EU countries.

Although recent literature has shown that switching to an insect-based diet could provide several relevant advantages—from a nutritional, environmental, economic and ecological point of view—the potential growth of insects as everyday food is still unclear. Despite a growing literature on consumer acceptance and product preference for insect-based food, a segmentation of this future and possible market has never been proposed. Therefore, in the present paper, a market segmentation based on the Food Related Lifestyle Scale (FRLS), was performed in order to predict consumers’ willingness to eat (WTE) edible insects. Moreover, the role of perceived behavioural control is taken into account. Results shows that the novelty and benefits of insect consumption have generated much interest in edible insects amongst consumers belonging to the Rational cluster, who showed the highest intention to introduce insects in their diet, thus confirming the presence of a niche of “early adopters”. In addition, perceived behavioural control was the major driver of intention. Implications for attempts to encourage people to incorporate insect-based foods into their diet are discussed, with special reference to the role of marketing campaigns.

This chapter introduces the means-end approach to the analysis of the meaning that food has to people. Food has meaning for people because of the goals they attach to food and eating, and research shows that these goals are many and diverse, extending far beyond the basic goal of nutrition and survival. The means-end approach can be used to analyze the meaning that people attach to a particular food product or the meaning that people attach to food in general. For the former, the laddering interview technique is usually used, and results are presented in so-called hierarchical value maps, and several examples are presented. For the latter, food-related lifestyle is a survey instrument that maps the role that food has for people in attaining life values. The main use of this instrument has been for segmentation, and a number of generic segments are presented that emerge from numerous studies that have used this instrument. The chapter closes with perspectives for future work in measuring the meaning of food in life.

Current meat consumption habits will need to change, especially those of Western consumers. The level of meat consumption is unsustainable, and a recent study estimates a necessary reduction of 90% of the current intake. Insects are a promising alternative to existing protein sources, but previous literature has emphasised the initial level of disgust displayed towards insects as a food option. The overall aim of this paper is to understand the attitude of consumers towards eating insects, also termed entomophagy, in order to outline the barriers that prevent adoption and provide insights in order to overcome these. Data were collected through an online questionnaire with a representative sample of Danish consumers (n = 975). Several constructs from the literature were measured: food neophobia, disgust, intention to try and intention to eat regularly. In addition, a new attitude scale was used, that specifically measures the attitude towards entomophagy. A discrete choice experiment was a part of the questionnaire. Using LatentGold 5.1 a segmentation analysis based on the choice experiment was conducted. The influences of intention were analysed using hierarchical regression in SPSS 25. Results of the choice experiment indicate that different segments of consumers of entomophagy exist, and that different segments are interested in different types of insects. Younger consumers and males are more positive towards entomophagy in general and the insect options in the choice experiment. Results of the regression analysis indicate that the attitude toward eating insects is multidimensional and that there seem to be indications of attitude ambivalence in all segments. The interest in entomophagy is important, as it will be a key factor in overcoming the barrier of disgust and turning insects into an acceptable food choice in the Western world.

This study explored the spillover and crossover associations between satisfaction with food-related life and life satisfaction in mothers, fathers and adolescent children in dual-earned families. This is a cross-sectional design study with mothers, fathers and children surveyed in Temuco, Chile. The participants were 303 dual-earner parents and their adolescent children (mean age 13.3 years, 51.5% female). Actor-partner Interdependence Model (APIM) and structural equation modeling were used to explore spillover (actor effect) and crossover (partner effect) associations among family members. As a result, fathers’ satisfaction with food-related life was positively associated with their own life satisfaction (p ≤ 0.01), as well as with their partner’s (mother’s) satisfaction with life (p ≤ 0.05), but not with their adolescent child’s life satisfaction (p > 0.1). Mothers and children presented positive spillovers between their own levels of satisfaction with food-related life and life satisfaction (p ≤ 0.01). No crossover effects were found between mothers and children (p > 0.1). This study results underscore the positive association between satisfaction with food-related life and life satisfaction among members of dual-earner families with adolescent children. Special efforts should be made by dual-earner parents to improve the variables related to their satisfaction with food-related life as well as their children’s satisfaction.

This paper focuses on Chinese elderly’s life satisfaction with food, a specific and important domain of Chinese people’s daily life, with two purposes: first, to investigate the relationship between satisfaction with food-related life and life satisfaction among Chinese elderly; second, to segment Chinese elderly based on their beliefs about food health, safety, freshness and taste, and profile them by their life satisfaction, satisfaction with food-relate life, food-related goals, self-rated health status, self-rated economic status and socio-demographic characteristics. Data were collected by personal interviews conducted in Beijing with 452 participants above 60 years old from March to May 2018. The correlation between satisfaction with food-related life and life satisfaction in the present study was positive and higher than in other countries. Three distinct segments were identified: health and safety concerned (38.6%), hedonic and less health concerned (29.4%), and less safety and somewhat health concerned (32.0%). The level of satisfaction with food-related life of the elderly was the lowest among the health and safety concerned segment, neutral in the hedonic and less health concerned segment, and highest among the less safety and somewhat health concerned segment. The elderly’s food safety belief might play a more dominant role than other food attributes beliefs in their satisfaction with food-related life. Eating a healthy diet and eating a safe diet were perceived as the most important food-related goals while keeping food expenditure as low as possible was perceived as not important by participants. Implications for how to improve Chinese elderly’s satisfaction with food-related life and future research were discussed.

Research has made steps towards the understanding of the main drivers and barriers related to Western consumers’ acceptance of food with ingredients derived from insects. Nevertheless, research has been hampered by the absence of a comprehensive, specific, and validated instrument for measuring consumer attitudes towards entomophagy. The current study presents a new self-report instrument for addressing this issue. The instrument was built upon three conceptual cores, which are reflected in the three factors emerged and tested through factor analyses performed on a representative sample of the Danish population (Study 1: N = 975), and a convenience Italian sample (Study 2: N = 543). The first factor represents the negative evaluation of direct entomophagy and is closely connected to disgust. The second factor represents the positive evaluation of direct entomophagy and is closely linked to individuals’ interest to try novel experiences and to eat novel foods. The third factor addresses indirect entomophagy, that is, the attitude towards using insects for feeding other animals that are reared for human consumption. Compared to existing measures of disgust and neophobia, the new instrument performs better in predicting intention in relation to both direct and indirect entomophagy.

This study has revealed the role of a new factor, perceived correspondence of health effects, in consumer acceptance of functional foods. Using a web survey of 1016 people, we hypothesized and verified the following: when an ingredient does not occur naturally in the carrier but the consumer assigns the same health effect to it as to the carrier, the product’s acceptance will be more positive than it would be if an identical health effect was not associated with the carrier and the functional ingredient. Factors influencing consumer acceptance were examined via binary logistic regression models. According to the results, if a functional food developer fortifies the carrier with an ingredient that does not occur naturally in the carrier, the product can expect higher acceptance if the health effects perceived by consumers are properly matched. In general, it has been found that expected taste and awareness of the product were decisive in all demographic and income groups, whereas perceived correspondence of health effects had a lesser, but still positive influence on acceptance.

Despite the fact that front-of-pack nutrition labels such as health claims and symbols have received growing attention in consumer behavior research, comprehensive conclusions could not yet be drawn to develop concrete policy actions, owing to the complexity of the subject and a constantly changing market environment. In this study, evidence-based policy recommendations and communication guidelines have been derived from the findings of the EU FP7 project CLYMBOL (“Role of health-related CLaims and sYMBOLs in consumer behavior”, Grant Agreement 311963), and have been evaluated and prioritized by European stakeholders using a three-round Delphi method. A moderate level of consensus was achieved and results suggest that policy priority should focus on ways to improve consumer motivation and interest in healthy eating. Consumers’ interest in healthy eating could be increased by adopting appropriate communication strategies such as using innovative ways to communicate the importance of healthy eating, which may aim to change the possible negative association between healthiness and tastiness. The highest-rated finding was related to consumers’ favorable attitude towards health claims with shorter and less complex messages and health symbols with a visible endorsement. Meanwhile, there was a clear consensus that health claims need to be scientifically substantiated and credible but phrased without using overly complex scientific wordings, in order to be meaningful for consumers. Furthermore, stakeholders from academia and industry believe that consumer awareness about existing health claims should be increased. The identified policy recommendations and communication guidelines stem from recent empirical evidence and provide useful insights that guide future policy development aligning consumer protection issues as well as public health and food marketing communication interests.

International segmentation is defined as the identification of groups of consumers with similar needs and wants in the food domain across cultural units. Four criteria for such segmentations are discussed (theoretical support for the segmentation base, cross-cultural relevance of the segmentation base, cross-cultural validity of the measurement instrument, validation by measures of responses to marketing parameters). Three dominant approaches are identified in the literature: segmentation by importance of product benefits, by means-end chains, and by food-related lifestyles. Pros and cons of each are discussed and needs for future research are outlined.

This qualitative study aims to investigate consumers’ perceptions toward dairy cow welfare in traditional mountain farms. While consumers’ understanding of conventional dairy production and animal welfare has already been investigated, how consumers perceive animal welfare in traditional mountain dairy farming remains still unexplored. Focus group interviews were conducted with consumers having different degrees of geographical proximity to mountains and with an explicit interest in local dairy products. The results of this qualitative study show that participants expect mountain farming to be on a smaller scale when compared to non-mountain farming systems and expect mountain products to be healthier. Similarly, all participants consider origin, locality, and small-scale production as relevant quality attributes of mountain cheese. However, the appreciation of these abstract features did not necessarily result in their recognition when sample pictures of traditional husbandry systems were provided especially in the case of urban participants. This study contributes to reveal the gap between urban consumers’ conception of mountain farming and the actual farming practices. It also indicates the need to promote an effective science-based dialogue on animal welfare that goes beyond an anthropomorphic perspective and tackles the complexity of farming systems in relation to the context in which they are located.

Results indicated that maternal well-being increased with an increased frequency of shared mealtime. Significantly, in contrast to the findings of previous studies, greater control over child eating habits was shown to affect adolescent well-being positively. These findings, among others, may contribute to the development of strategies for improving diet quality, overall well-being, and well-being in the food and family domains for all family members.
