Biography

Claudia Hunot-Alexander, PhD, is Professor-Researcher in Eating Behaviour at CUCS-UdG (Guadalajara, México) since 1997. She holds a Bachelor’s degree in Nutrition from King's College London. She completed her PhD at the Department of Behavioural Science and Health, University College London, under the mentorship of Jane Wardle, with Rebecca Beeken and Clare Llewellyn. There she developed the Adult Eating Behaviour Questionnaire, a validated tool informed by the Behavioural Susceptibility theory and UCL appetitive trait research. Upon returning to México, she has led validations of the BEBQ, CEBQ-Toddler, CEBQ, and AEBQ in Mexican populations. Her research examines biological, family, social and food-environment determinants of eating behavior across the lifecourse, including interactions with mental health, inequalities, feeding practices, and ultra-processed food exposure to shape weight trajectories and future chronic-disease risk. She has published work on appetitive traits, intergenerational transmission, and metabolic-health prevention pathways. She mentors graduate research and co-leads educational innovation in behavioral nutrition, maternal-infant feeding, psychometrics, and behaviour-change interventions with UdeG. Her mission is to advance evidence-based, culturally relevant assessment and prevention strategies to improve long-term public health outcomes in eating behavior and disease prevention.
