Petros A. Tarantilis is a Professor of Instrumental Chemical Analysis of Natural Products at the Agricultural University of Athens. He leads the Laboratory of Chemistry within the Department of Food Science and Human Nutrition. He researches the isolation, purification, and structure determination of natural products using advanced chromatographic and spectroscopic techniques. He focuses on developing methodologies for analyzing the primary compounds of Greek plants, like medicinal and aromatic plants and saffron. He also explores the biological activity of natural products, investigating the antioxidant, antimicrobial, and toxicity properties. His academic background includes a B.Sc. in Agricultural Sciences specializing in Food Science and Technology, and a Ph.D. in Agricultural Sciences with a focus on instrumental chemical analysis and the biological activity of saffron components. His postdoctoral research centered on pigments, particularly anthocyanins and flavonoids, from saffron plant tepals. He secured grants and scholarships, including the NATO Expert Visit Grant, and support from the State Scholarship Foundation for his postdoctoral and postgraduate studies. He collaborates internationally with institutions including Université de Reims Champagne-Ardenne, Universidad de Castilla-La Mancha, and the Russian Academy of Sciences.
