Agribusiness firms requiring a consistent supply of high quality agricultural raw materials have increasingly adopted production contracts to coordinate their supply chains. The present work is aimed to shed light on the role played by sources of asset specificity and uncertainty related to quality strategies in the diffusion of contractual arrangements within the Italian durum wheat sector. To this purpose, factor analyses and probit regressions are estimated in data collected among durum wheat producers. The findings confirm that the role of asset specificity is negligible in presence of staple crops. Moreover, they reveal that experience, transparency and technological stability are all relevant aspects that reduce uncertainty and, in turn, trigger the adoption of production contracts as a governance solution for durum wheat.

The increasing request for food sustainability is affecting the pasta sector in Italy. This phenomenon introduces different sources of uncertainties that, in turn, put pressure on all the stages of the supply chain, with a consequent emerging need for a higher level of coordination. Based on the Transaction Costs Theory approach, the paper is aimed at verifying whether contract design—revolving around the negotiation of contractual attributes with different functions in terms of safeguard, adaptability, and coordination—plays a crucial role in aligning sources of uncertainty surrounding transactions with the allocation of property and decision rights. To this aim, a sample of durum wheat producers is interviewed for expressing their preferences about some contractual features, such as price, production and quality rules, sustainable environmental techniques, and advisory services. Using a discrete choice analysis through a multinomial logit model, results reveal that, thanks to the presence of attributes able to ensure coordination and adaptability, contracts are able to steer towards elements of sustainability related to food quality and safety, whereas further efforts are needed to share environmental goals with farmers.

This study regards the estimate of olive oil pruning biomass. The objective is to increase the knowledge of pruning biomass availability to business purposes. Having recognized the importance of both uncertainty and dynamics, we first estimate the probability distribution of the yields in a small farms sample and then determine the related expected value of pruning olive oil yield. We use these estimates to draw microscenarios illustrating the dynamics of the pruning biomass yields based on the enlargement of the number of trees per hectare (intensification) and of the olive oil crop area (specialization). The results show how intensification and specialization determine a mosaic pattern of changes in the pruning yields probabilities. The resulting estimate of the pruning biomass availability is similar to those provided in literature for the Italian case. Across the Italian regions, the difference between the expected pruning yield and a theoretical yield index decreases as the specialization increases. Two validity boundaries of the model are presented. The study concludes noting that, unless they are associated, intensification and specification not systematically augment the average olive oil pruning biomass yield in a territory and that the yields increase appears to be more probable beyond intensification large values.

Purpose The purpose of this paper is to consider how farmers cope with the uncertainty-related broiler process innovation in long-term contractual relationships. Design/methodology/approach This paper conceptualizes the process innovation implementation in terms of governance structure adaptation. The focus of the study is on the property and decision rights combination in process innovation implementation. It is argued that this approach highlights a key aspect of the nexus between governance mode and innovation within inter-firms relationships. Findings The results first show that the allocation of the decision rights between the farmer and the processor explains the process innovation implementation and, second, that the farmer contractual preferences are caused by the expected costs of the adaptation. Third, estimates of transaction and production costs variations are proposed. Research limitations/implications This study considers only the uncertainty stemming from the process innovation, whereas further uncertainty sources may influence the contract negotiation. Second, the lack of sample representativeness requires further information to be gathered. Finally, the investigation could be developed by modeling the farmer-processor negotiation. Practical implications The results indicate that effective governance structures in poultry production should give room to the adaptation in order to facilitate process innovation. Originality/value To conceptualize the process innovation implementation as an adaptation of the governance structure strengthens the knowledge of innovation in the sector context and contributes to the extent of the applied field of transaction cost economics.

Food safety systems that implement Hazard Analysis and Critical Control Points (HACCP), certification, traceability, brands as well as in geographical indications and private branding require dedicated investments in physical resources, human resources and in re-organising the production processes and control activities. Investment decisions can be made according to legal requirements or based on voluntary decisions. In this study, we address the two following research questions: do the inducements due to the regulatory framework influence the decision to invest in the implementation of food safety strategies and what is the size of this potential influence? Does the allocation of the decision right to invest influence the investment decision and does this potential influence vary across food safety systems? We carried out an empirical investigation on investment decisions in the Italian meat sector, comparing systems dedicated to safety and marketing strategies. The knowledge of such an influence provides a better understanding of the micro-level motivations of food safety investments in a critical area and contribute to the design of regulatory strategies.
