The study monitored the effect of differentiated mineral nutrition of microgreens species by solution of sodium selenate (2 mg Se/L) on the content of Se, chlorophylls, and other minerals. Chlorophylls were measured spectrophotometrically, Se by electrothermal atomic absorption method (ETAAS) with Zeeman-effect background and elements’ concentration was performed by a dual Inductively coupled plasma atomic emission spectroscopy (ICP-OES) iCAP7600 instrument. The content of selenium in fresh weight moved on average from 0.013 to 12.556 μg/g. Selenisation increased the content of Se in all tested species significantly (p < 0.05) without impacting yield. The content of chlorophyll a moved from 249.9 mg/kg (Mizuna) to 604.4 mg/kg (Arugula) with significant differences between the species, without significance (p ≤ 0.05) between tested variants. The influence of selenisation on other minerals significantly differed (p < 0.05) due to the genetic variability. A significant (p ≤ 0.05) increase in Ca was observed in green basil (10.7%) and cress (20.9%); of Fe in green basil (1.6%) and cress (40.9%); of K in arugula (1.6%), green basil (3.9%) and cress (2.8%); of Zn in arugula (2.6%), green basil (8.6%), cress (2.7%) and radish (5.9%); and of Ba in green basil (5.6%) and cress (23.9%).

The species Pleurotus ostreatus is a commercially, gastronomically, and biotechnologically important fungus. Its strain variability has been little researched. The study provides an evaluation of 59 oyster mushroom production strains in terms of the ability to accumulate selected metals in the cap and stipe. The fruiting bodies were grown under identical model conditions on straw substrate. Metal concentrations (ET-AAS) in dry fruiting bodies ranged in values 1.7–22.4 mg kg−1 for Al, 2.6–9.7 mg kg−1 Ba, 199–4560 mg kg−1 Ca, 1.7–12.0 mg kg−1 Cu, 12–120 mg kg−1 Fe, 16,000–49,500 mg kg−1 K, 876–2400 mg kg−1 Mg, 0.39–11.0 mg kg−1 Mn, 46–920 mg kg−1 Na and 11–920 mg kg−1 for Zn. More Cu, Fe, K, Mg, Mn, Zn accumulated in the cap, while in the stipe Ba was amassed. No significant difference was found between Al, Ca and Na between the accumulation in the cap and the stipe. Furthermore, the dependence of metal uptake from the substrate depending on the fortification of the substrate was confirmed. Statistically significant (p < 0.05) synergistic relationships were shown in pairs Al and Ba, Al and Fe, Ba and Na, Ba and Ca, Ca and Na, Cu and Fe, Fe and Mn, Fe and Zn, K and Mg, K and Mn, K and Zn, Mg and Mn, Mg and Na, Mg and Zn and Mn and Zn in the substrate without the addition of sodium selenate to the substrate. Altered relationships were observed after the application of sodium selenate to the substrate, synergism of Se and Ni, Se and Co and Se and Hg, Cu and Mn, Cu and Fe, Zn and Co, Zn and Ni, Zn and Hg, Mn and Fe, Mn and Cr, Co and Ni, Co and Hg, Ni and Hg, Pb and Cd. The findings of the study may help in the selection of production strains with hypercumulative properties for a particular metal and subsequent use in the addition of fortified fruiting bodies (e.g., with Zn). Based on the study the strains less sensitive to the accumulation of hazardous metals is possible to select for large-scale production, which is important from the perspective of food safety.

Positively affecting crop quality and yields, amino acids used as plant stimulants play a special role in ensuring global food security. L-tryptophan (L-Try) and L-glutamic acid (L-Glu) are important biostimulants that increase the yield of field crops and vegetables. Carrot is one of the most important vegetables due to its production volume in the world (sixth most consumed vegetable) and its nutritional value. The response of different plant species to amino acid application varies. The literature mainly deals with the effects of ready-made products containing a mixture of several amino acids, with no exhaustive studies on the effects of individual amino acids on carrot quality and yield. This paper is based on a two-year field experiment (2019–2020), in which the effect of two amino acids, L-Trp (7.5 g·ha−1) and L-Glu (60.0 g·ha−1), on carrot (Daucus carota L.) was investigated. They were applied to the leaves (FA) or both to the soil and to the leaves (S + FA), separately, (L-Trp or L-Glu) or as a mixture (L-Trp + L-Glu). The control plot was treated with mineral fertilizers only. The research was conducted as a field experiment in a split-block design. The yield of carrot storage roots and their content of dry matter, protein, sugars, total soluble solids (TSS), and ascorbic acid were determined. The amino acids positively affected the yield of carrots compared to the control, but only the synergistic action of L-tryptophan and L-glutamic acid increased it significantly. On average, for both amino acids the S + FA application increased the protein content and the marketable yield of storage roots significantly more than in response to FA treatment. A significant increase in marketable yield compared to the control was found after the combined soil and foliar application (S + FA) of all amino acid combinations, but the L-Trp + L-Glu mixture worked best. The storage roots of carrots grown on the plot with L-Trp + L-Glu contained significantly more protein and TSS than those on the control plot. The content of TSS was also positively affected by L-Trp used on its own, while L-Glu increased the content of ascorbic acid. Amino acids applied to the leaves (FA) increased the content of total sugars in the carrot roots more than when applied both to the soil and to the leaves (S + FA). Of all treatment combinations, the synergistic action of L-Trp and L-Glu made it possible to obtain the highest yields of carrot storage roots, containing the most protein and total soluble solids.

The green pea is ranged between the crops with high antioxidant potential. This potential is connected with phytochemical components mainly with polyphenols. All these bioactive chemicals have disease - fighting properties. In real human diet there is no usually possibility of fresh garden pea consumption during the whole year. The total polyphenol content is significantly changed among other things by processing methods. Focus on variety, bio-fortification and other specific agricultural inputs, could be the right method of total polyphenol contents and total antioxidant capacity increasing. The main objective of the present work was to consider the changes of total polyphenols content in dependence on variety and to evaluate an antioxidant potential six garden pea varieties arranged by the ripening point of view. Variety “Exzeleus” belongs to very early type, ́Premium ́ is early maturing,”Flavora” is middle ripening variety and the last three varieties “Utrio”, “Jumbo” and “Ambassador” are middle late types of varieties. Every variety was grown in four replications, i.e. on 24 m2 total plot in Botanical garden of Slovak University of Agriculture in Nitra during 2013. Total polyphenols were determined by the Lachmans method and expressed as mg of gallic acid equivalent per kg fresh mater. Total antioxidant capacity was measured by the Brand - Williams method using a compound DPPH (2.2-diphenyl-1-pikrylhydrazyl)). The highest value was reached in case of variety “Jumbo” 1179.995±28.081 mg/kg, the lowest value in case of “Premium” 674.505 ±26.541 mg/kg. When evaluating an antioxidant capacity in chosen varieties of garden pea, the interval estimated by our trail ranged from 0.523 ±0.206% (“Exzeleus”) to 6.844 ±0.591% (“Flavora”) Following the both observed parameters, TPC and TAC, variety “Flavora” (as a member of middle ripening varieties) seems to be the most optimal from the human nutrition point of view. The various varieties had significant influence on TPC and TAC according to used statistical analyzes. Within the all observed varieties, when they were arranged by ripening, there was estimated significant difference only in case of garden pea varieties early – middle late. Other couples didn’t show any statistical important differences in total polyphenol content.
