Mariana Buranelo Egea is a Food Technologist and Nutritionist with a Master's in Food Science and a PhD in Food Engineering. She works mainly with (i) functional foods (vegetable/plant-based/non-dairy origin), (ii) their naturally present or added bioactive compounds, (iii) strategies for adding these compounds to human food such as product development, and (iv) their effect on human metabolism, especially their role in risk factors for metabolic syndromes, particularly obesity and diabetes.
