I am working as a Researcher in the Food Technology Department, Food Industries & Nutrition Research Institute, National Research Centre (NRC), Cairo, Egypt. I have completed my Ph.D. degree at the School of Food and Health, Beijing Technology and Business University (BTBU), Beijing, China. My area of research interest is related to bioactive compounds from food by-products; Novel bioactive peptides as antioxidants; utilization of agro-wastes in food products; phytochemicals (especially polyphenols) for functional food production; antioxidant activity techniques; protein quantification and analysis using electrophoresis techniques; simulated human gastrointestinal digestion; food nanotechnology; nanocarrier; emulsions; Instrumental analysis including HPLC, RP-HPLC, LC-MS-MS, and spectrophotometric analysis.
