I am Jiangxiong Zhu, an Assistant Researcher at Shanghai Jiao Tong University (SJTU), where I also earned my Ph.D. in Food Science and Engineering. My research interests center on food active ingredients, functional food and nutrition, separation and purification, and food safety and detection technologies. I am particularly focused on developing and applying aptasensors, polysaccharide-based materials, nanomaterials, and carbon dots for analytical and nutritional innovations. Over the years, I have contributed to several national and provincial research projects and published peer-reviewed papers in reputable international journals. My work aims to integrate nanotechnology, analytical chemistry, and food science to improve food quality, safety, and health benefits. I am also an independent reviewer for multiple international journals. Through my research, I strive to advance interdisciplinary solutions that promote healthier and safer food systems.
