Yoo Kyoung Park, PhD (Corresponding Author) Professor Yoo Kyoung Park is a distinguished faculty member at the Department of Medical Nutrition, Graduate School of East-West Medical School, Kyung Hee University. Her research over the past five years has significantly contributed to the field of nutrition, focusing on various aspects such as food literacy, dietary interventions for the elderly and subjects with chronic disease, and their impacts on health. Her recent work also examines the impact of dietary components on glycemic metabolism and cognitive function, as demonstrated by her studies on sugar-free jelly and multidomain lifestyle interventions. Moreover, Prof. Park's dedication to advancing nutritional science is reflected in her publications on the health impacts of food for special medical purposes (FSMP) for managing metabolic conditions. Her academic journey includes a Ph.D. from the University of Illinois at Urbana-Champaign, and she continues to influence the field through her research and leadership roles within the Korean nutrition community, serving as president of the Korean Society for Clinical Nutrition.
