The Moroccan picholine tree’s leaves contain phenolic compounds that benefit human health. However, the amount and type of these compounds can vary based on factors such as the extraction method and conditions. This study aimed to improve phenolic compounds’ extraction while minimising harmful chemicals’ use. It has been found that using ethanol as a solvent with ultrasonic extraction is the most effective and environmentally friendly technique. Several parameters, such as the extraction time, solid/solvent ratio, and ethanol concentration as independent variables, were evaluated using a surface response method (RSM) based on the Box–Behnken design (BBD) to optimize the extraction conditions. The experimental data were fitted to a second-order polynomial equation using multiple regression analysis and also examined using the appropriate statistical methods. In optimal conditions, the ultrasonic time, the ratio (solvent/solid) and the concentration (ethanol/water), the content of total polyphenols (TPC), total flavonoids (TFC), and antioxidant activity (by DPPH, ABTS, FRAP) were, respectively, 74.45 ± 1.22 mg EAG/g DM, 17.08 ± 1.85 mg EC/g DM, 83.45 ± 0.89% 82.85 ± 1.52%, and 85.01 ± 2.35%. The identification of phenolic compounds by chromatography coupled with mass spectrum (HPLC-MS) under optimal conditions with two successive extractions showed the presence of hydroxytyrosol, catechin, caffeic acid, vanillin, naringin, oleuropein, quercetin, and kaempferol at high concentrations.

The Moroccan date-growing sector is rich in a wide diversity of varieties but faces major challenges, notably the undervaluation of certain varieties intended mainly for animal feed. In this study, our objective was to evaluate the antiglycation activity of four date varieties, including three low-market-value varieties and one high-market-value variety, harvested during two seasons (2021 and 2022). In addition, to improve our knowledge of the antiglycation potential, molecular docking analyses were carried out. The results of the antiglycation activity of the date extracts showed strong activity, particularly for the ‘Khalt Khal’ variety, which showed a 50% inhibition concentration (IC50) of 1.83 mg/mL and 2 mg/mL in 2021 and 2022, respectively. In addition, the molecular docking analysis also showed the possible link between the bioactive compounds identified and their mechanisms of action. Our findings suggest new evidence for the antiglycation properties of the bioactive compounds present in dates. These results suggest the use of these varieties as a source of bioactive molecules or as a food additive. This could make it possible to create medicines or food products with a high commercial value using dates, which could help to treat the complications associated with glycation.

Argania spinosa L. Skeels is an emblematic tree in Morocco, known worldwide for its medicinal and nutritional value. Its fruits contain kernels used to prepare an edible oil, the leaves are used to feed livestock, and its wood is used as fuel. If the oil acquires high importance, the other components of the fruit of the argan are undervalued. Our objective is to invest the waste of the argan industry. Particularly, our study aimed to assess the effect of thermal activation of argan pulp on its therapeutic value, its phenolic profile and its functional and physicochemical properties. After heat treatment, the HPLC analysis for the average total phenolic content varied from 2% to 37%, depending on temperature. The antioxidant activity was increased with heat treatment. Higher values of antioxidant activity, polyphenol and pigment content were recorded at 70 °C. Functional properties analysis indicated that water solubility index and water absorption capacity were significantly affected by heat stress. Physicochemical analysis showed that moisture content, titratable acidity and soluble solids were affected.

This study investigates the extraction, isolation, and chemical modification of cellulose from coffee ground residues using TEMPO-NaBr-NaClO oxidation. These residues represent a promising renewable source of cellulose, which is obtained after the removal of impurities such as lignin (24%), hemicellulose (42%), and other compounds. The TEMPO (2,2,6,6-tetramethylpiperidine-1-oxyl radical)-catalyzed oxidation selectively converts primary hydroxyl groups into carboxylate groups (-COOH) under mild conditions in aqueous media, achieving an oxidation yield of up to 67%. Structural and morphological analyses, including scanning electron microscopy (SEM), Fourier transform infrared (FTIR) spectroscopy, and X-ray diffraction (XRD), confirm the successful chemical modification of the cellulose. The results indicate a reduction in crystallinity index from native cellulose (80%) to oxidized cellulose (65%), reflecting partial disruption of the microfibril structure and the introduction of new chemical functionalities. FTIR analysis reveals the appearance of characteristic carboxylate bands, confirming the conversion of hydroxyl groups into carboxyl groups. Energy-dispersive X-ray (EDX) analysis further highlights a significant increase in oxygen content, indicating the efficiency of the oxidation process. The TEMPO-oxidized cellulose is water-soluble, enabling the production of valuable polyelectrolytes and intermediates. These chemical modifications improve the cellulose’s reactivity, broadening its potential applications in various fields, including biocomposites, sustainable packaging materials, and functional films. This work demonstrates the feasibility of utilizing coffee ground residues as a renewable, eco-friendly source of modified cellulose for high-value applications.
