I have recently completed a Master's degree in Food Science focusing on myopathies in fast-growing chicken in the Canadian poultry industry. This study has several chapters; the first is on the detection and categorization of chicken myopathies. The second is about the prevention and mitigation of the impact of myopathies, including offering solutions to the industry on how to utilize the meat. Currently, I am a Ph.D. candidate at the University of Guelph focusing on the topic of using high-pressure processing on meat products to improve the safety of the food.
