Black tea aroma is one of the essential attributes in determining the quality of black tea. β-Glucosidases were investigated for their ability to enhance the aroma of black tea by hydrolyzing the glycoside compound. The addition of β-glucosidase was done by dissolving the enzyme on a sodium citrate buffer (pH 5.0), which was then sprayed on tea leaves during black tea processing. The β-glucosidase treatment significantly increases the volatile compound from glycoside precursors such as linalool, geraniol, and methyl salicylate. Moreover, the volatile compound from carotenoid and lipid precursors (nerolidol and β-cyclocitral) was also increased with β-glucosidase treatment.
Red chili is a climacteric fruit that still undergoes respiration after harvest. During storage, it is susceptible to mechanical, physical, and physiological damage and decay incidence, therefore a method is needed to protect it so that the quality losses can be minimized. One way this can be achieved is by applying edible coatings that can be made from hydrocolloids, lipids, or composites of both, in addition to antimicrobial agents that can also be added to inhibit microbial growth. In this study, we detail the application of an edible coating made of gelatin composite from tilapia fish skin, which has a transparent color and good barrier properties against O2, CO2, and lipids. To increase its physicochemical and functional qualities, it must be modified by adding composite elements such as pectin as well as hydrophobic ingredients such as garlic essential oil. This study was conducted to determine the effect of a gelatin–pectin composite edible coating (75:25, 50:50, 25:75), which was incorporated with garlic essential oil (2% and 3%) on the physicochemical properties of red chili at room temperature (±29 °C), RH ± 69%) for 14 days. The best treatment was the 50–50% pectin–gelatin composite, which was incorporated with garlic essential oil with a concentration of 2 and 3%. This treatment provided a protective effect against changes in several physicochemical properties: inhibiting weight loss of 36.36 and 37.03%, softening of texture by 0.547 and 0.539 kg/84 mm2, maintaining acidity of 0.0087 and 0.0081%, maintaining vitamin C content of 2.237 and 2.349 mg/gr, anti-oxidant activity (IC50) 546.587 and 524.907; it also provided a protective effect on chili colors changing to red, and retains better total dissolved solid values.
Coconut is widely used as a food source in producing countries, and during consumption, the waste that is generated needs to be reduced through by-products processing to ensure environmental sustainability. This study aimed to assess the functionality of by-products (endo- and mesocarp) of coconuts at early and mature stages. The aqueous and ethanolic (50 and 100% ethanol in water) extracts of coconut by-products were evaluated for the DPPH radical scavenging activity and subjected to linoleic acid-β-carotene system assay in contrast with synthetic antioxidants. Ultrasound-producing extract of young coconut mesocarp provided the highest antioxidant activity with a lower IC50 value (117 µg mL−1) than butylhydroxytoluene (BHT, 170 µg mL−1). Based on the linoleic acid-β-carotene system assay, the extract exhibited a higher antioxidant activity (1.25×) than tertiary butylhydroquinone (TBHQ, 200 µg mL−1); and comparable with butylhydroxyanisole (BHA, 250 µg mL−1). Therefore, extracts of coconut by-products, particularly the young mesocarp, can be an alternative natural antioxidant.

This study is aimed at optimizing the Saffron essential oil (SEO) nanoparticles using the ionic gelation method. Response surface methodology (RSM) with Box-Behnken design (BBD) was applied to investigate the optimum conditions and the effects of three independent variables: LWCS concentration (0.1-0.3%), Arabic gum concentration (9.6-9.8%), and ratio (core: wall material) (1 : 5, 1 : 7.5, 1 : 10) on the responses of -average, polydispersity index (PDI), and zeta potential. The results showed that the quadratic model developed from the RSM was statistically significant ( value < 0.05). The quadratic model can be used to describe well the relationship between the variables on the response observed. The lack of fit was nonsignificant ( value > 0.05) relative to pure error for all response variables, indicating that the model fitted well. The model equation obtained for the process through RSM was adequate. The LWCS concentration and Arabic gum concentration had a significant effect on -average and PDI. The ratio (oil: Arabic gum/LWCS) has a significant effect on zeta potential. The optimum condition was the LWCS concentration of 0.1% and Arabic gum concentration of 9.6%, and the ratio (oil: Arabic gum/LWCS) 1 : 5 produced the optimum SEO nanoparticles with a -average value of 16.24, PDI of 0.495, and zeta potential of 15.76. The verification values were close to the predictive value given by the Design Expert® 12 program with value > 0.05 at the 95% confidence level. Therefore, the application of the RSM with Box-Behnken was suitable for optimizing the saffron oil nanoparticles with desirable responses.
