Ms Eleni Kamilari currently works as a PhD student at the APC Microbiome Institute of the University College, Cork. Her main focus is metataxonomic identification of the microbial diversity of fermented foods, and the isolation and identification of bacteriocin-producing strains and other novel anti-microbial peptides. These isolates are to be incorporated into food products to inhibit spoilage microbes’ growth, and to extend the products’ shelf-life, according to the demands of a collaboration with the Kraft-Heinz company. Additionally, Ms Kamilari has three years of experience as a research assistant at the Department of Agricultural Sciences, Biotechnology and Food Science at the Cyprus University of Technology. Her main responsibilities involved the organization and development of the method of 16S rRNA and ITS loci metagenomic sequencing, for the identification of the authenticity and enhancement of the competitiveness of Cypriot and North Aegean traditional products of the Agri-Food Sector. Moreover, she worked for 1.5 years as a microbiologist researcher at the AVVA Russian Pharmaceutical company, based in Cyprus. Her primary responsibilities involved the interpretation of 16s rRNA sequencing analysis of clinical and pre-clinical studies performed on Russian patients, as well as the investigation of the contribution of novel medical products, including prebiotics, on gut microbiome shaping, and their influence on diseases.
