Prof. Dr. Shengbao Cai is currently a Professor at the Faculty of Food Science and Engineering, Kunming University of Science and Technology. He received his Ph.D. in food science from China Agricultural University in July 2013. He has been working at Kunming University of Science and Technology since August 2013. Prof. Dr. Shengbao Cai is mainly engaged in the analysis, identification, functional activity evaluation, and mechanism of action of medicinal and edible plant resources, and, further, uses functional factors to develop and apply health products. He mainly focuses on dietary regulation of chronic metabolic diseases, such as diabetes, fatty liver, obesity, and gout. In recent years, he has presided over 3 National Natural Science Foundation projects, and 2 provincial scientific research projects, published more than 30 research papers, and applied for more than 10 invention patents, of which 6 patents have been authorized.
