United Nations Educational, Scientific and Cultural Organization (UNESCO) recognizes various historical sites as world heritage sites (WHSs). A historical heritage represents the cultural tradition of people, to whom it grants the essence of their diversity. In 2003, UNESCO expanded the area of cultural protection to include other heritage assets known as “intangible cultural heritage” (ICH). The Fiesta of the Patios celebrated in the city of Córdoba (Spain) was recognized as an ICH by UNESCO in 2012. The problem this research analyzes is studying and understanding whether the tourists who participate in an event registered as an ICH have the same motivations as the tourists who visit a specific WHS have. This research is thus to find out the segmentation of tourists who wish to discover ICHs using two models: Poria et al. and McKercher. On the basis of this segmentation, four groups of tourists of WHS were identified: alternative, cultural, emotional, and heritage. In addition, in this research, three motivational dimensions were detected when visitors decide to attend the Fiesta of the Patios: hedonic, cultural, and convenience.

Internal marketing involves planning, implementing, and assessing strategies focused on the internal customer (employee), who, at the same time, looks to strengthen their organizational commitment. In this context, leaders and managers should focus on human capital through policies which encourage the motivation and satisfaction of employees, in a way that they feel committed to the institution which, at the same time, will help the achievement of organizational targets. Accordingly, the purpose of this research is to analyze internal marketing dimensions and their possible relationship with organizational commitment. To do so, fieldwork based on a research questionnaire has been developed, aimed at a very important area of the social economy: co-operativism in a developing country. A total of 2,499 surveys were distributed among employees, leaders, and managers of Ecuadorian cooperatives. To describe the possible mediating effect of the research variables, a hierarchical, multiple linear regression analysis was applied. The results reveal that the internal marketing dimensions present statistically significant correlations with the organizational commitment, with the internal communication dimension being its maximum relational exponent. It is also extracted from the study that sociodemographic and works position variables positively influence the relationship between both constructs, presenting higher relational levels when the employee is married, has higher studies and their work contract is temporary.

The main objective of this work is the analysis of the emotional perception and cultural interest of tourists in terms of the artistic and monumental heritage that they visit. Specifically, this research study is focused on the analysis of a World Heritage Site, the Historic City of Sucre (Bolivia). Visitors have been segmented according to their perception of the heritage and their cultural interest, resulting in four types of tourists being identified: alternative tourist, cultural tourist, emotional tourist, and heritage tourist. The conclusions show the need to develop knowledge of World Heritage Sites among tourists, as a greater emotional perception and cultural interest lead to a higher level of satisfaction with the tourist experience.

The continuous dynamism that tourism suffers makes the motivations of tourists change, making them search for new experiences. In this sense, gastronomy is positioned as a key element of union between tourism and culture, thus developing gastronomic tourism. The analysis presented here will address gastronomic motivations and their influence on the value perceived by foreign tourists in Oruro (Bolivia), based on a total sample of 370 and through a covariance-based structural equation modelling (CB-SEM). Among the main results, it is worth highlighting the positive influence of gastronomic motivations on the value perceived by tourists. These results are also very useful for public and/or private entities for the creation of new strategies to promote local gastronomy.

Purpose Gastronomy is currently becoming a predominant factor for understanding and taking part in the cultural heritage of a destination. The enjoyment of culinary pleasures has become a primary motivating factor when choosing a travel destination. Gastronomy is, therefore, a fundamental part of the satisfaction that the traveller experiences when visiting a location. Design/methodology/approach Data collection for the research was based on the completion of fieldwork with a sample of tourists who visited the Ecuadorian province of Manabí. Based on this understanding and completed fieldwork, the study analyses the gastronomic experiences of tourists visiting the province of Manabí (Ecuador). Findings study shows the existence of three types of tourists, based on their higher or lower interest in the local gastronomy when travelling: survivors, enjoyers and experiencers. The results also reveal that there are different levels of satisfaction regarding local gastronomy in terms of interest and the previous cultural motivation of the tourist. Practical implications The characterisation of the different tourist segments identified and the assessments that these dictate regarding the destination’s gastronomy allow tourist managers to develop and offer tourist products adapted to the wishes and needs of tourists. Originality/value Research involves the innovation in the use of segmentation models for culinary tourism widely considered in Europe but applied in this case to developing countries in Latin America.

Purpose The objective of this research is to analyse the affective organizational commitment in cooperatives in Ecuador. This was done by adapting and testing a measurement scale based on the one-dimensional model proposed by Porter. Design/methodology/approach Field work was carried out, with a structured questionnaire being given to a significant sample of workers in Ecuadorian cooperatives (2,499 employees and heads of department). The scale was adapted through a structural equation model. Findings The results show that the adaptation of the measuring scale for affective organizational commitment using a one-dimensional vision is consistent for the cooperative sector. In addition, the analysis of the socio-demographic variables and the work position show that some of them have a statistically significant relationship with organizational commitment. Practical implications The proposed scale can contribute to the management of human capital in cooperatives in Ecuador. It can also be used as a tool to support the national agency in charge of the cooperative sector in this country (Superintendencia de Economía Popular y Solidaria, “Superintendency of Popular and Solidarity Economy”). By applying this tool, social economy organizations in Ecuador can measure the level of their employees' affective commitment with the institution they work in. Using the results, the people in charge and the leaders of the organization shall be able to introduce strategies to develop this organizational variable that is crucial for the proper management of human resources and, therefore, to help to obtain the institutional purposes. Originality/value This research project presents a measuring tool that can discover the unique features of the cooperative sector in a developing country such as Ecuador as it provides a special framework for managing human resources in this sector. Additionally, in a cooperative organization many employees have different roles in the same company. This tool can be adapted for other kinds of cooperatives with different activities (financial and non-financial activities) in different sectors.

Currently, gastronomy is a fundamental element for tourists to discover the culture and traditions of a destination. The transcendence granted to a culinary experience in a specific place can become a fundamental motivation for the visit and determine the level of satisfaction reached. In this research, the relationship between tourism and gastronomy is analysed in the city of Popayán, Colombia, a city that has received recognition from UNESCO as a Creative City of Gastronomy. To do this, we examine the influence of different dimensions of culinary motivation in the satisfaction with gastronomy that is experienced during the visit. In addition, we analyse the role of tourist attitude towards culinary experience in gastronomy satisfaction. The methodology used in this research is based on partial least squares structural equation modelling. The main results indicate that the importance of the culinary experience of the tourist in the choice of the destination mediates the effect that culinary motivations exercise on the satisfaction with the gastronomy.

This research has the aim of analysing corporate sustainability dimensions in the cooperativism of a developing country such as Ecuador by means of a valid and reliable measuring scale. These institutions, as part of the social economy, should be focused on a balance among the economic, social and environmental aspects, which are the central axis of corporate sustainability. The literature review and analysis led to the development of a research questionnaire that was applied to 2042 people, among them managers, employees and members of the Ecuadorian cooperatives. In order to validate the dimensional structure and consistency of the scale, an exploratory factorial analysis was performed, followed by a confirmatory analysis using structural equations. The results show a consistent measuring scale based on the traditional dimensions of corporate sustainability (economic, social and environmental) and also presenting a new dimension of corporate identity.

Corporate social responsibility (CSR) and corporate sustainability have been subject to wide academic debate in recent times. However, publications that connect both constructs in most parts are clearly theoretical. The aim of this work is to analyse the possible relationship between corporate social responsibility and corporate sustainability in Ecuadorian co-operatives. These approaches lead to focusing this study on the perceptions of internal and external stakeholders. For this, a sample of 2,042 individuals from these social economy institutions was used. Various covariance-based structural equation modelling (CB-SEM) examples were developed in order to determine the effect of the dimensions of the CSR within the dimensions of corporate sustainability. The main findings of this research allowed for the determination that there is a positive and statistically significant correlation between the dimensions of these constructs. In any case, within the relationships of the four CSR dimensions identified (economic, legal, ethical and philanthropic), the greatest link among them with the social dimension of corporate sustainability is highlighted. This model explains 30.2% of the variance of this dimension. Specifically, its link with the economic dimension (γ = 0.27, p < 0.001) and the legal dimension (γ = 0.11, p < 0,001) of CSR stands out.

It highlights the existence of three types of tourists, based on their perceptions regarding the gastronomic experiences in the city (known as survivors, enjoyers, and experiencers). Additionally, it concludes that the local gastronomy of the destination provides significant culinary motivations.

Purpose The purpose of this paper is to analyse the loyalty of the tourists who visit a city with an important heritage event: The Holy Week Processions in the city of Popayán (Colombia), recognised by UNESCO as Intangible Cultural Heritage. Design/methodology/approach This research focuses on determining the mediating effect of the perception of the processions and the evaluation of the elements of the destination during a visit to the city by using a sample of 615 tourists. The software tool used in this research is the Smart partial least squares. Findings Results show that the motivations of the visitor are not enough by themselves to guarantee loyalty regarding the destination, but other variables are needed such as the perception of the processions and the evaluation of the elements of the destination, through which the motivation acquires a true meaning to secure the tourist’s loyalty. Practical implications The principal practical implication of this research is offering to the stakeholders involved in the promotion and organisation of this event an opportunity to undertake and review actions for improvement. Originality/value This research seeks to enlighten the interaction between heritage, sustainability and heritage in Latin America.

In this respect, tourists look for authenticity in the gastronomy heritage of these destinations, making it, thusly, a motivation for visiting the place. This research presents a segmentation of the tourists who visit Sucre (Bolivia), on the basis of a higher or lower interest in the gastronomy of the city. The results extracted from the research highlight the existence of three tourist segments with different attitudes regarding gastronomic experiences. Additionally, it notes the importance that a specific type of tourist places on discovering and better understanding the gastronomy of a city as part of its cultural heritage.

This research intends to establish a characterisation of the tourists who attend a representation that has been recognised as intangible cultural heritage by UNESCO, specifically, the Holy Week processions in the city of Popayán, Colombia. To achieve this goal, segmentation we conducted on the basis of two models that are widely used in the segmentation of tourists in World Heritage Sites: the McKercher model, based on cultural motivations, and Poria, Butler, and Airey’s model, based on the emotional perception of the visited heritage. Within this segmentation, there are four underlying types of visitors: incidental cultural, sightseeing cultural, serendipitous cultural and purposeful cultural tourists. The results show that there are three motivational dimensions among tourists who attend the Holy Week processions in the city of Popayán: hedonic, cultural, and convenience. The innovation of this research is, therefore, to reinforce the validation of types of tourists in the literature on Word Heritage Site destinations but, in this case, we apply it to an intangible cultural heritage resource in Latin America.

Corporate social responsibility (CSR) involves activities carried out by businesses based on the principles of transparency, ethical, moral and environmental values. Despite the growing interest in this area of study, there is no universally recognised definition, which, in turn, affects the measuring of these activities. The aim of this research is to analyse the dimensions of CSR, through a valid and trustworthy measuring scale of co-operativism in Ecuador. The research questionnaire was developed from the theoretical analysis of the construct and it was given to 2042 individuals, among them managers, employees and members of Ecuadorian co-operatives. In order to determine and evaluate the factorial structure, convergent validity and to discriminate the measuring scale, an exploratory and confirmatory factorial analysis was conducted with covariance-based structural equation modeling (CB-SEM). The results show that the suggested scale is reliable and consistent with the pursued goals. In this sense, and in relation to the viability of the factorial analysis performed, 86.2% of the correlations have a score greater than 0.3. Because of this, it can be confirmed that CSR can be measured in the four dimensions analysed: Economic, Legal, Ethical and Philanthropic.

Societies nowadays shape their history by establishing traditions, customs, artisan expressions and, in short, the cultural heritage that represents them as a people in symbiosis with their natural environment. The present investigation analyzes the tourist phenomenon that has developed around intangible cultural heritage and natural heritage in the province of Manabí (Ecuador). Three types of visitors were identified in terms of motivation schemes; these three types were considered valid and useful for segmenting within the province of Manabí as a tourist destination. The conclusions suggest the need to conceive tourism products that improve the image of the destination and, at the same time, enable the sustainable management of the destination itself.

Gastronomy allows tourists to discover the cultural roots of the destination, thus being one of the motivations for its choice and even becoming a fundamental factor in the analysis of the overall satisfaction of the tourist experience. This research is focused on the analysis of the gastronomic experiences of foreign tourists who visit the city of Oruro (Bolivia). The main results of this research show a segmentation of travellers on the basis of their perceptions regarding the gastronomic experiences in this city into three different groups (survivors, enjoyers, and experiencers). Additionally, the study concludes that these gastronomic experiences are highly related to the motivations that the travellers have to discover a specific destination, and that their level of satisfaction with these experiences is highly connected to the relationship that gastronomy has with the cultural heritage of the local community.

The Fiesta de los Patios of Cordoba, Spain, was declared an intangible cultural heritage in 2012 by UNESCO, thus protecting and recognizing the set of its expressions of an intangible nature. This study investigates tourists’ motivations and satisfaction in relation to an intangible cultural heritage, as well as the mediation of the value perceived between these two variables. The analysis is carried out through structural equations and modeling. The analysis extracts, among other conclusions, the positive influence of the motivations on both the perceived value as well as on tourists’ satisfaction and, in turn, the positive influence of the perceived value on satisfaction.

El patrimonio cultural inmaterial conforma la propia historia de los pueblos. El presente estudio trata de profundizar en el concepto de esta tipología de patrimonio y, específicamente, analiza la Fiesta de los Patios de Córdoba (España), declarada por la Organización de las Naciones Unidas para la Educación, la Ciencia y la Cultura (UNESCO) como Patrimonio Inmaterial de la Humanidad en 2012. El objetivo de este artículo es presentar los principales resultados de una investigación realizada a los turistas que participaron en la Fiesta de los Patios en 2014, desagregado por género. La investigación demuestra la presencia mayoritaria de turistas con estudios universitarios, con una edad superior a los 50 años y con un nivel de renta medio.

Este proyecto propone el uso de las nuevas tecnologías y, en concreto, del concepto de “cápsula informativa” para incentivar la motivación del alumnado en su aprendizaje y dar un mejor uso de algunas de las actividades propuestas en el aula, de manera que se incremente su perdurabilidad y que el esfuerzo que supone su organización no caiga en saco roto. El contenido concreto de las cápsulas se ha pretendido que sea un compendio de mini-entrevistas a los profesionales que visitan las aulas de la titulación en distintas asignaturas y que proceden del mundo de la empresa (emprendedores, directores de departamentos de comercio exterior, directivos de multinacionales, técnicos de la Cámara de Comercio, etc.).
