Dr. José Juan Buenrostro-Figueroa is a Researcher at the Biotechnology and Bioengineering Laboratory of the Food Research and Development Center in Delicias, Mexico. He earned both his MSc and PhD in Food Science and Technology from the Universidad Autónoma de Coahuila. His research focuses on the development of integrated biorefinery-based bioprocesses that combine microbial fermentation, enzyme production, and sustainable extraction technologies to valorize agro-industrial waste and underutilized species. Through these approaches, he aims to transform renewable resources into value-added food ingredients with bioactive properties and enhanced technological functionality.
