Inhabitants of the Indonesian island of Sumatra are faced with the problem of insufficient food supplies and the consequent risk of undernourishment and health issues. Edible insects as a traditional and readily available food source could be part of the solution. The nutritional value of insects depends on many factors, e.g., species, developmental stage, sex, diet, and climatic conditions. However, edible insects bred in Sumatra for human consumption have never before been assessed with regard to their nutritional value. Our study involved analyses of crude protein, chitin, fat and selected fatty acid contents of giant mealworm larvae (Zophobas morio), larvae of the common mealworm (Tenebrio molitor) and nymphs of the field cricket (Gryllus assimilis). Crude protein content in the samples ranged from 46% to 56%. Highest (35%) and lowest (31%) amounts of fat were recorded in giant mealworm larvae and larvae of the common mealworm, respectively. Chitin amounts ranged from 6% to 13%. Based on these values, which are comparable to those known from other food insects reared in different regions of the world, the edible species bred in Sumatra could become food sources with a potential to help stave off hunger and undernourishment.

For consumers, one of the basic criteria of choosing a foodstuff, apart from nutritional values, is their taste and smell. In edible insect as a novel food, these criteria are not quite decisive. The main criterion in the Western countries is the acceptability of the food. This work deals with sensory evaluation of protein and energy bars, enriched with cricket flour from American and Czech producers, and their acceptability for consumers from the Czech Republic. The sensory evaluation was done using the questionnaire survey and a simple electronic nose. The survey has shown that edible insect bars are acceptable as a new type of food for consumers in the Czech Republic. Best rated by consumers were orange and pineapple flavour bars from the Czech manufacturer. Statistically significant difference was not detected between evaluation of the bars from the American and Czech manufacturers. Also, the difference between the bars of different flavours from the Czech producer was evaluated using a simple machine - a portable electronic nose. There was not a statistically significant difference between bars of different flavours from the American manufacturer. The positive contribution of the survey is that more than 80% of consumers are willing to consume food enriched with edible insect. This fact shows a change in public attitude to these foods.
Urease is the enzyme catalyzing the hydrolysis of urea into carbon dioxide andammonia. This enzyme is substrate-specific, which means that the enzyme catalyzes thehydrolysis of urea only. This feature is a basic diagnostic criterion used in thedetermination of many bacteria species. Most of the methods utilized for detection ofurease are based on analysis of its enzyme activity – the hydrolysis of urea. The aim of thiswork was to detect urease indirectly by spectrometric method and directly by voltammetricmethods. As spectrometric method we used is called indophenol assay. The sensitivity ofdetection itself is not sufficient to analyse the samples without pre-concentration steps. Therefore we utilized adsorptive transfer stripping technique coupled with differential pulse voltammetry to detect urease. The influence of accumulation time, pH of supporting electrolyte and concentration of urease on the enzyme peak height was investigated. Under the optimized experimental conditions (0.2 M acetate buffer pH 4.6 and accumulation time of 120 s) the detection limit of urease evaluated as 3 S/N was 200 ng/ml. The activity of urease enzyme depends on the presence of nickel. Thus the influence of nickel(II) ions on electrochemical response of the enzyme was studied. Based on the results obtained the interaction of nickel(II) ions and urease can be determined using electrochemical methods. Therefore we prepared Ni nanoelectrodes to measure urease. The Ni nanoelectrodes was analysed after the template dissolution by scanning electron microscopy. The results shown vertically aligned Ni nanopillars almost covered the electrode surface, whereas the defect places are minor and insignificant in comparison with total electrode surface. We were able to not only detect urease itself but also to distinguish its native and denatured form.

Livestock welfare is an important condition for obtaining high-quality and safe food. According to the legislation edible insects are classified as livestock; and for this reason it is necessary to comply with the edible insect welfare conditions. This article focuses on selected welfare conditions for mealworm (Tenebrio molitor) breeding, with special focus on the fat content influenced by different breeding temperature (17 °C, 23 °C and 28 °C). Maximum fat content 24.56% was observed at 23 °C. To obtain maximum fat content this appears to be the optimal breeding temperature. Another evaluated aspect was the nutritional stress and a way of killing, and their impact on fat content, which showed to decrease with the nutrient stress. The most decline was detected towards the end of the observation period. The analysis showed that in terms of preservation of the fat content, the best way is killing by freezing, due to the metabolism slowdown. We also analysed the content of heavy metals in a mealworm larvae using cyclic voltammetry with subsequent evaluation. In the measured sample concentrations of heavy metals did not exceed the maximum allowable concentration of heavy metals in this commodity. From this point of view mealworm appears to be a safe food.
Miniaturization and integration of chemical devices into modules that aredimensionally comparable with electronic chips (Lab on Chip) is nowadays developingworldwide. The aim of our work was to suggest and optimize the best conditions forfabrication of TFT sensor due to its sensitivity and low experimental deviations. Newelectrochemical analytical device was developed to ensure certain known mass transport toelectrodes, which is the most limiting process that influencing the response quality of thesensor. The device consists from rotating conic vessel for measured sample and stick-inthick-film sensor. The sensors responses were tested under trace analysis of cadmium.Measurements were done also with the others electrochemical arrangements to comparewith the new one. The sensor output current response dependence on the liquid velocity andgeometrical arrangement within using standard electrochemical couple of potassiumferrocyanide-ferricyanide is presented. We found out that the new device with controlledflow of electrolyte to sensor worked properly and gave satisfactory results.

This work focused on analysing the content of selected sterols and profile of fatty acids of edible insect species – mealworm ( Tenebrio molitor ) and superworm ( Zophobas morio ), which are expected to increase their usability in human nutrition. Sterols content was determined using capillary...
