Juan D. Rios-Mera is a Food Industry Engineer who graduated from the National University of the Peruvian Amazon (UNAP), Peru (2011), and received his M. Sc. and Doctorate in Food Science and Technology from the University of São Paulo (USP), Brazil (2016 and 2021, respectively). His lines of research are as follows: food reformulation towards a healthier profile; the reduction in sodium, animal fat, and synthetic additives in meat products; the processing and quality of meat and meat products; the study of meat proteins; and the microencapsulation of bioactive compounds. He has contributed various publications in the first quartile of scientific journals with great impact on the food field. His doctoral thesis was awarded with an honorable mention in the Capes Prize for doctoral theses in Brazil (Food Science category), in 2022.
