Dr. Jia-Nan Chen is an associate professor at the Department of Food Science and Engineering of Light Industry College at Liaoning University. He received his doctorate from the Dalian University of Technology. His teaching disciplines include "Principles of Food Technology" (undergraduate course) and "Modern Instrumental Analysis and Experimental Technology" (master's course). His main research areas include quality changes and regulation in food processing, fermented food utilization, and resource development.
