My name is Dr. An-xiang Su, and I am currently an Associate Professor in the School of Food Science and Engineering at Nanjing University of Finance and Economics. I earned my Ph.D. in Food Science from Nanjing Agricultural University. My research focuses on the screening and optimization of bioactive components from natural products, with particular attention to their metabolic pathways and interactions with gut microbiota. This involves developing efficient extraction, separation, and purification techniques for functional components such as polysaccharides, proteins, and polyphenols from agricultural products.
