With interest in camel milk growing due to its nutrients and biologically active compounds, research into methods of processing and drying it is crucial. In recent decades, extensive studies have explored its chemical composition and health benefits with a focus on drying techniques and their effects on its properties. This review systematically summarizes the available literature on camel milk drying processes and their effects on its chemical composition with a view to shortening the drying time. To achieve this goal, we meticulously reviewed numerous studies published between 2014 and 2024 to identify optimal drying methods that maximize the preservation of camel milk’s nutrient components and bioactive compounds. Our analysis revealed significant findings: freeze drying preserves nutrients better than spray drying, but is less efficient. Spray drying, while faster, tends to compromise some nutritional values. Conclusively, optimizing drying parameters can improve production efficiency and nutrient retention.

Processed cheeses belong to food products of high nutritional and biological value. Bioflavonoids, which are widespread in higher plants and have a number of unique properties, are practically not found in traditional processed cheese chunks. Quercetin is most commonly found in plant flavonoids. Most studies have confirmed the following basic biological properties of quercetin: immunostimulating effect (increases the activity of phagocytes, T- and B-lymphocytes; increases the production of antibodies, reduces the manifestations of secondary immunodeficiency, the incidence of viral infections); oncoprotective effect due to a decrease in the damaging effect of oxygen radicals on the genetic apparatus; antioxidant protection; positive effect in cardiovascular diseases, etc. The cheapest, most bioavailable and frequently used plant raw materials are onions, which also contain bioflavonoids. The article explores the use of wild onions in the creation of functional processed cheese. In connection with the spread of coronavirus infection, it is necessary to strengthen the body's immunity with the help of nutrition. The experiments carried out have established the quantitative presence of flavonoids, vitamin K in processed cheese with wild onions. Inulin and saponins were found in the composition of wild onions, which also proves the advisability of using wild onions in food. The research results on the development of a technology for a new processed cheese and a method of adding wild onion filler in different variations: fresh and in the form of a powder are presented. It was found that fresh addition of Allium odorum imparts a sharp onion aroma, and when dried it imparts a slightly chalky aroma to the final product. The positive effect of the vegetable filler on the shelf life of processed cheese has been proven.

This paper considers the process of squeezing oil from melon seeds in a screw oil press, using the method of planning a full-factor experiment. To study the interaction of various factors affecting the process of squeezing oil from melon seeds, mathematical methods of experiment planning were applied. Melon seeds were used as the object of the study. The results of studying the physical and mechanical indicators of melon seeds are reported; the rational modes of pressing melon seeds have been determined; the aerodynamic indicators of melon seeds have been defined in order to design a cold-pressed press for melon seeds. Ventilation modes have been substantiated; the soaring coefficient for melon seeds was derived. The coefficient of resistance for a melon seed is 1.54. The highest critical velocity values for melon seeds were 6.4, for kernels 4.67, and for husks 3.94, respectively, with seed moisture content of 24.08 %. The dependence of the oil yield on huskness has been determined. It is established that in the process of pressing there is a decrease in the oil content of the oil seed meal as it moves from the receiving chamber to the exit from the press, at the same time there is a compaction of the compressed product. Based on the study’s results, a plant for squeezing oil from melon seeds was designed. As a result of solving the problem with the vector optimization criterion, optimal intervals of input parameters were obtained: the initial humidity of the raw material is 9.15...10.27 %, the speed of rotation of the oil press screw is 0.843...0.895 s–1, the clearance for the yield of cake is 0.750...0.800, the oil seed meal temperature at pressing=87...89 °С, the huskness of the starting product is 7.13...7.23 %

Multifruit juicers are designed, constructed and improved to be able to process pineapples, oranges and watermelons efficiently. Little juice manufacturers need both a small and efficient device for juice extraction for being economically concurrent compared to big corporations. The authors of the represented paper aim to present the experimental device for juice extraction, its effectiveness, and functional. This device was created using the compressive and compressive shear forces conveyed by an auger conveyor system as a working power. The juicer consists of a hopper, a screw conveyor shaft, a filter screen, a juice outlet, gearbox housing, and a motor. The analysis of the component design enabled the authors to use the data in order to identify the sizes, manufacture and assemble the machine. The authors have made a lot of tests to detect the efficiency and functionality of the presented device. Tests of the device productivity were carried out using watermelons loaded into the device both peeled and unpeeled. Percentage of juice yield, juice extraction efficiency and extraction losses were used as performance indicators. Productivity analysis results revealed that a fruit type and peel condition reliably influenced productivity indicators at the value of 1 %. The percentage of juice yield from peeled and unpeeled watermelons constituted 89.5 % and 89.7 %, respectively. Extraction efficiency constituted 96.6 % for peeled watermelons and 97.1 % for unpeeled ones. Extraction losses amounted to 2.9 % and 2.6 % correspondingly. The proposed device is easy to use and maintain, therefore, it will perfectly suit the needs of small fruit juice manufacturers and can help to get economic efficiency to the small manufacture

The most important stage in the technological operations for grain production is its post-harvest processing. At this stage, the quality of the grain masses is lost because the temperature condition inside bulk grain is almost never checked during temporary storage. In order to increase the technological efficiency of primary grain processing and storage, an installation has been designed that could preserve the quality of grain at low-capacity enterprises or during temporary storage. As the self-heating of grain during storage is a serious issue, the installation would also help solve the problem related to the temporary lack of storage facilities. Thus, using active grain ventilation makes it possible to improve the resistance of grain masses to storage. The available body of research into energy-saving drying processes, active ventilation, and purification of grain from light impurities mainly resolve highly specialized technological tasks. Of interest are those studies that aim to design and implement the rational equipment structure for the active ventilation and cleaning of grain from light impurities, which make it possible to practically execute non-stationary modes. This paper considers the efficiency of active ventilation and the reduction of energy costs depending on the installation's structural parameters; specifically, the height of the chamber and the speed of supply of warm air are selected. The height of the working chamber of 1 m and the air velocity of 1.1–1.4 m/s have been experimentally proven and theoretically substantiated.
