My name is Alexios Vardakas and I work in GAEA Products S.M. S.A. company in the New Product Development department. At the same time, I am a post-doctoral researcher in University of Patras, Greece in the Food Science and Technology department in Agrinio. In 2021 I accomplished my PhD in the University of Food Technology in Plovdiv, Bulgaria, entitled “Valorization of agri-food industry by-products through polyphenols application in fruit processing”. My current research object is “Green Bioprocesses - Chemical Technologies for Utilization of Olive Processing By-products in Food Technology”. My scientific research interesting areas is about agri-food by-products valorization, polyphenols, anthocyanins, antioxidants, new green extraction technologies.
