Wei Xu, Ph.D., full professor, master supervisor, graduated from Northeast Agricultural University in 2013. From June 2015 to December 2017, he was seconded to the China Rural Technology Development Center, Ministry of Science and Technology. Dr. Xu is mainly engaged in food protein chemistry and application research and has a good research foundation in the fields of the food protein structure–activity relationship, protein functional factors' activity mechanism, and nutrition and healthy food development.
