Bacterial biofilms are a significant problem in the food industry, as they are difficult to eradicate and represent a threat to consumer health. Currently, nanoparticles as an alternative to traditional chemical disinfectants have garnered much attention due to their broad-spectrum antibacterial activity and low toxicity. In this study, silver nanoparticles (AgNPs) were synthesized by a biological method using a Jacaranda mimosifolia flower aqueous extract and by a chemical method, and the factors affecting both syntheses were optimized. The nanoparticles were characterized by Ultraviolet–visible (UV–Vis) spectrophotometry, Fourier-transform infrared spectroscopy (FTIR), Dynamic light scattering (DLS), X-ray diffraction (XRD), and Transmission electron microscopy (TEM) with a spherical and uniform shape. The antibacterial and antibiofilm formation activity was carried out on bacterial species of Pseudomonas aeruginosa and Staphylococcus aureus with the capacity to form biofilm. The minimum inhibitory concentration was 117.5 μg/mL for the chemical and 5.3 μg/mL for the biological nanoparticles. Both types of nanoparticles showed antibiofilm activity in the qualitative Congo red test and in the quantitative microplate test. Antibiofilm activity tests on fresh lettuce showed that biological nanoparticles decreased the population of S. aureus and P. aeruginosa by 0.63 and 2.38 logarithms, respectively, while chemical nanoparticles had little microbial reduction. In conclusion, the biologically synthesized nanoparticles showed greater antibiofilm activity. Therefore, these results suggest their potential application in the formulation of sanitizing products for the food and healthcare industries.

Background/Objectives: Recent advances in nanotechnology have enabled the use of biosynthesized silver nanoparticles (AgNPs) in healthcare, including the management of diabetes mellitus, a metabolic disorder characterized by impaired glucose homeostasis. AgNPs have shown promising effects on enzymes, insulin signaling, gut hormones, and in vivo models. Despite the availability of oral treatments, challenges persist, prompting interest in novel therapies such as AgNPs, which are currently under investigation in various in vitro and in vivo studies. Methods: This narrative review was conducted through a PubMed search using the terms “antidiabetic + activity + AgNPs” in April 2025. Relevant articles published in English were selected and analyzed, with emphasis on studies employing biosynthesized AgNPs from plants in in vitro and in vivo models. Information was extracted regarding the experimental approaches used to evaluate antidiabetic activity, the plant sources employed, nanoparticle characteristics, concentrations tested, and corresponding outcomes. Results: The biosynthesis of AgNPs employs bioactive compounds from plants, making it an environmentally friendly green synthesis method. Plant extracts are the most common biomaterial for AgNPs biosynthesis. Most of the in vitro studies evaluated the inhibitory effect of AgNPs on α-glucosidase or α-amylase; meanwhile, in animal studies, the main parameter evaluated is blood glucose level. Conclusions: The antidiabetic potential of AgNPs is becoming increasingly evident as ongoing research continues to explore their effects through both in vitro and in vivo studies. In this review, the current state of research regarding the potential use of AgNPs for diabetes management and treatment is presented, highlighting recent findings and discussing future perspectives in the field.

Pancreatic cancer affects many people and is quite aggressive. Metallic nanoparticles may be an alternative treatment for this disease. In this work, the antiproliferative activity of biosynthesized silver nanoparticles was evaluated. Stenocereus queretaroensis peel extract was used as a reducing agent for nanoparticle synthesis; the characterization was carried out using spectroscopic techniques, X-ray diffraction, and microscopy. The antiproliferative effect was evaluated in the MIA PaCa-2 pancreatic tumoral cell line, and a molecular docking test was run with the STAT3 protein. The results obtained show that it was possible to synthesize silver nanoparticles from the plant extract, which was confirmed through characterization studies. The average size of the nanoparticles was measured to be 48.8 nm, and they predominantly exhibited a spherical shape. The antiproliferative effect was demonstrated in the pancreatic cell line, with an IC50 value of 15.66 µg/mL. The molecular docking analysis predicted a strong interaction with the STAT3 protein, with a binding energy value of −6.47 obtained. With these results, it is concluded that biosynthesized silver nanoparticles inhibit pancreatic tumor cell growth and may represent an innovative cancer treatment.

Background/Objectives: Diabetes mellitus (DM) is one of the most common metabolic disorders, with a continually increasing population incidence. One of the main therapeutic approaches for this condition involves the inhibition of alpha-amylase and alpha-glucosidase—key enzymes involved in carbohydrate breakdown. Silver nanoparticles have exhibited inhibitory activity against both enzymes, suggesting their potential in regulating postprandial blood glucose levels. This study aimed to evaluate the antidiabetic potential of silver nanoparticles biosynthesized with Stenocereus queretaroensis flower extract. Methods: The flower extract was prepared and, following a qualitative and quantitative phytochemical analysis, was utilized in the reaction to biosynthesize S. queretaroensis flower extract nanoparticles (SAgNPs). The SAgNPs were characterized using UV–visible spectroscopy, dynamic light scattering (DLS), scanning electron microscopy (SEM), energy dispersive X-ray (EDX), X-ray diffraction (XRD), and Fourier transform infrared spectrophotometry (FTIR). The antidiabetic potential of the biosynthesized SAgNPs was evaluated in vitro using alpha-amylase and alpha-glucosidase inhibitory assays, while an animal model was used for postprandial hypoglycemic activity in healthy mice. Results: The phytochemical analyses showed the presence of phenolic compounds and flavonoids like sinapic acid, p-coumaroyl tyrosine, procyanidin dimer β1, and dihydroquercetin in the flower extract. The SAgNPs were found to be rough and spherical in shape, with an average size of 99.5 nm. The inhibition of alpha-amylase and alpha-glucosidase by SAgNPs exhibited an IC50 of 4.92 µg/mL and 0.68 µg/mL, respectively. The animal model results suggested that SAgNPs at 100 mg/kg caused a significant decrease in the postprandial glucose level; this effect is likely attributable to delayed carbohydrate digestion, as supported by the in vitro findings. Conclusions: S. queretaroensis-synthesized silver nanoparticles may constitute a promising option for antidiabetic therapy.

Metabolic syndrome (MetS) comprises a cluster of metabolic risk factors, which include obesity, hypertriglyceridemia, high blood pressure, and insulin resistance. The purpose of this study was to evaluate the effects of laurate-bioconjugated fructans on pro- and anti-inflammatory cytokines in Wistar rats with MetS induced by a high-fat diet. Laurate-bioconjugated fructans were synthesized with agave fructans, immobilized lipase B, and vinyl laureate as the acylant. Groups were fed a standard diet (NORMAL), a high-fat diet (HFD), or a high-fat diet plus laurate-bioconjugated fructans (FL PREV) for 9 weeks. A fourth group received a high-fat diet for 6 weeks, followed by simultaneous exposure to a high-fat diet and laurate-bioconjugated fructans for 3 additional weeks (FL REV). The dose of laurate-bioconjugated fructans was 130 mg/kg. Laurate-bioconjugated fructans reduced food and energy intake, body weight, body mass index, abdominal circumference, adipose tissue, adipocyte area, serum triglycerides, insulin, insulin resistance, and C-reactive protein but they increased IL-10 protein serum levels and mRNA expression. The impact of laurate-bioconjugated fructans on zoometric and metabolic parameters supports their potential as therapeutic agents to improve obesity, obesity comorbidities, insulin resistance, type 2 diabetes mellitus, and MetS.

Diabetes mellitus represents a major global health challenge, which has generated ongoing interest in developing enzymatic strategies to modulate carbohydrate digestion. Phlorizin, a dihydrochalcone found predominantly in plants of the genus Malus, has been extensively investigated for its antidiabetic potential; however, its practical application is limited by its low water solubility. Enzymatic fructosylation represents an effective biocatalytic approach to overcome this limitation and modulate the functional properties of phenolic compounds. In this study, the inhibitory activity of an enzymatically fructosylated phlorizin-enriched fraction, containing 4-O-mono-fructosyl phlorizin (4PHF) as its main component, was evaluated against key carbohydrate-digesting enzymes using in vitro assays complemented by in silico molecular docking analyses. The 4PHF-enriched fraction showed potent inhibition of α-amylase in vitro, with an IC50 value of 2.69 µg/mL. However, no significant inhibition of α-glucosidase was observed within the analyzed concentration range, indicating a selective inhibitory profile. Molecular docking analyses supported the experimental findings, revealing favorable binding orientations and predicted affinities of 4PHF for α-amylase and α-glucosidase, stabilized primarily by hydrogen bond interactions. Overall, the combined in vitro and in silico results demonstrate that enzymatic fructosylation effectively reprograms the enzyme interaction profile of phlorizin, highlighting 4PHF as a structurally optimized modulator of carbohydrate-digesting enzymes, with potential relevance for applied research on enzyme inhibition related to metabolic diseases.
