Dr. Saunjoo L. Yoon is an Associate Professor at the College of Nursing, University of Florida. She teaches clinical and didactic nursing courses for undergraduate and accelerated BSN students and mentors Honors students, McNair Scholars, and doctoral students in both PhD and DNP programs. She is a member of the Academic Affairs Committee and the Nursing Formal Review Committee. She is also a member of several professional organizations, including the American Society of Clinical Oncology (ASCO), Oncology Nursing Society (ONS), Sigma Theta Tau International Honor Society (STTI), Southern Nursing Research Society (SNRS), American Nurses Association/Florida Nurses Association (ANA/FNA), and UF Health Cancer Center (UFHCC). She has received multiple honors, including the University of Florida Research Foundation Professorship Award (2016–2019) and the UF Health Cancer Center Celebration of Excellence Award—Bench to Bedside Award (2015). Her research interests include complementary and alternative medicine interventions to improve nutritional status, cancer cachexia, and symptom management in adult patients with gastrointestinal cancers; herbal supplement use for symptom management and health promotion in older adults; and palliative care related to cancer cachexia in patients with gastrointestinal cancers.
