Karl-Erik Eilertsen is a Professor in Marine
Biochemistry/Seafood Science at UIT - The Arctic University of Norway. He
earned his Ph.D. in Biochemistry from the University of Tromsø in 2002. His research
interests include (1) Seafood and health (e.g., Nutrition and cardiovascular
disease; Biologically active ingredients in seafood and seafood waste; Effect
of food processing; Antioxidant, anti-inflammatory and anti-hypertensive
effects of seafood, etc.) (2) Marine Bioprospecting (e.g., Studying marine
benthic organisms in search for antioxidants, anti-inflammatory and
