Paz Otero received her bachelor´s degree and Ph.D. in Food Science from the University of Santiago de Compostela, Spain. She has held postdoctoral research positions at Limerick Institute of Technology, Ireland (2014–2017); the Institute of Food Science Research, Autonomous University of Madrid (2017–2018); University of Vigo (2020–2022), Spain; and Mountain Research Centre, Polytechnic Institute of Bragança, Portugal (2022–2023). She has published extensively in the fields of food chemistry, toxicology, analytical chemistry, and nutrition, with more than 62 research articles, 85 contributions to international congresses, 15 book chapters, and 2 edited books. She also serves as an invited reviewer for several research journals and guest editor for Special Issues.
