Carmen is a veterinarian, senior lecturer and researcher at the Animal Science Institute, Faculty of Veterinary Science, Universidad Austral de Chile (1980-2020). Since March 2020 she retired, but remains as an Ad Honorem- Academic. She created the Animal Welfare Programme at Universidad Austral de Chile (2009), since then Chilean party of the OIE Collaborating Centre for Animal Welfare and Livestock Production Systems Chile-Uruguay-México (2013). Permanent Member of the National Commission of Animal Welfare, created by the National Service for Agriculture and Livestock (SAG), Ministry of Agriculture, Chile, and of the National Institute for Norms (CHILE) on all norms related to meat (since 1992). Member of the Expert Commission on Animal Welfare, ad hoc group Land Transport of Animals, at the OIE, Paris 2003 – 2004 and Member of the WVA advisory group on animal welfare (2016-2020). Has organized and been a speaker in over 50 continuing education courses for vets and other professionals in the areas of: carcass evaluation and grading, meat quality, animal welfare and transport in relation to preslaughter handling and meat quality, at national and international level. Has been invited speaker at conferences in many countries and regularly organizes scientific conferences on animal welfare and training courses for slaughterhouses, cattle dealers, transporters and farmers.
