Jennifer MacAdam is a plant physiologist at Utah State University in Logan, UT, who studies the composition, physiology, and management of forages cultivated in the western U.S. Her research has demonstrated that organic dairy cows grazing irrigated legume pastures have increased milk production, omega-3 fatty acids, and increased CLA compared with total mixed ration-fed cows, and that beef cattle grazing irrigated legume pastures had increased average daily gains and reduced enteric methane as a function of intake compared with cattle grazing irrigated cool-season grass pastures. She studies the condensed and hydrolyzable tannin concentrations of legumes and non-legume forbs, particularly their ability to re-partition nitrogen from urine into dung, and the effect of altitude on the accumulation of non-fibrous carbohydrates. Dr. MacAdam is the author of an introductory text on plant physiology and plant anatomy titled Structure & Function of Plants.
