O Objective: To identify the use of traditional food, quantify the main foods consumed in the region, and propose a dish of good eating for the Totonac region. Methodology: A semi-structured survey was carried out in 328 households of the municipality of Filomeno Mata, Veracruz, Mexico. The Household Dietary Diversity Score (HDDS) and a section were used to obtain information about the regional foods that the local population consumes on a daily basis. Results: The families recognized a total of 35 regionally-produced vegetal and animal products. Each household that participated in the survey mentioned an average of 7 foods out of the whole list. Limitations: To improve and implement a good food dish, several elements must be taken into account: age, gender, height, physical activity, or physiological condition, among others. Conclusions: The registered foods are linked to the local culture and open a door to the generation of various resource-leveraging strategies, such as the dish of good eating for the Totonac region.

Ecosystem Services (ESs) valuation is a fundamental tool for understanding the interrelationships between society and the benefits provided by ecosystems, especially in contexts with specific territorial characteristics. This study aimed to analyze the relationship between the educational level and the prioritization of ESs in the Laguna de Bustillos basin, located in Cuauhtémoc, Chihuahua, Mexico, to provide elements for the design of differentiated and adaptive public policies aimed at ecosystem conservation. The methodology used consisted of the application of structured surveys to collect socioeconomic information and identify the presence and perceived value of provisioning, regulating, cultural, and supporting ESs. Data analysis was conducted using the nonparametric Kruskal–Wallis test and Principal Component Analysis (PCA). The results showed a higher prevalence of provisioning services (64%), followed by supporting (60%) and cultural services (59%), whereas regulating services were less prevalent (54%). Statistically significant differences were found in ES valuation according to users' educational level. The PCA revealed two structural components: one associated with provisioning and regulating services, and another related to cultural and supporting services. These findings support the proposal of differentiated conservation strategies aligned with the social priorities of various educational groups. It is concluded that public conservation policies must incorporate the diversity of social perceptions as an essential element for achieving sustainable and participatory environmental management.

Introduction: Reducing food waste in the retail sector is crucial for food security, yet traditional retail vulnerabilities are often overlooked. This study aimed to characterize marketing dynamics, the frequency of suboptimal produce, and waste management practices in fruit and vegetable retail outlets to identify the primary causes of food waste and propose targeted strategic interventions. Methods: Using an observational cross-sectional design, a convenience sample ( n = 180) across four Mexican states was stratified into four commercial profiles: municipal markets, produce stores, grocery stores, and open-air markets. Statistical analyses included Pearson's Chi-square tests ( χ2 ), K-means cluster analysis and Multiple Correspondence Analysis. Results: Self-reported responses associated food waste with infrastructural and supply-chain constraints at the point of sale. The reported analysis did not detect a statistically significant association between marketing cluster membership and self-reported weekly waste in this sample. The Multiple Correspondence Analysis identified exploratory associations among retail format, sampled location, deterioration susceptibility, and reported utilization practices (e.g., household consumption, animal feed, or landfill disposal). These findings identify format- and context-specific interventions for future evaluation; such as adequate roofs/awnings for open-air markets or staff training and adequate display furniture for grocery stores, and campaigns promoting consumer acceptance of suboptimal produce. Discussion: Future research should expand the sampling frame to other Mexican states to enable a broader cross-regional assessment. Overall, this study addresses retail fruit and vegetable waste through a multidimensional approach integrating marketing dynamics, suboptimal produce, and unsold inventory management across traditional commercial profiles.

Introduction: Prickly pear (Opuntia ficus-indica) constitutes a strategic resource in arid and semi-arid zones. Despite this, its quality characterization has been restricted to physicochemical parameters, highlighting a notable absence of sensory evaluations that describe the complexity of its consumption experience. Given this gap, the research aimed to characterize the sensory profile of prickly pear produced under agroecological management in the semi-desert of Zacatecas, Mexico. Methods: Using a trained panel and multivariate statistical tools, the study sought to determine discriminant attributes and propose an initial approximation of a hierarchical sensory wheel for the species. A cross-sectional study using a trained panel ( n = 35) was employed to evaluate 41 sensory attributes related to aroma, flavor, appearance, and texture. The statistical treatment included a repeated measures Analysis of Variance and a Bonferroni post-hoc test ( p ≤ 0.05), followed by a Benjamini-Hochberg False Discovery Rate correction to control for multiple comparisons. Subsequently, a Principal Component Analysis was applied to typify the sensory profiles based on significant attributes. Results: Distinct identity profiles were established. The “Blanca Cristalina” cultivar stood out for its aromatic complexity and varietal typicality (distinctive vegetable notes), while the “Amarilla Plátano” cultivar consolidated itself as the archetype of textural quality (maximum juiciness and crunchiness). Discussion: Prickly pear produced under agroecological management from Zacatecas possesses a distinctive organoleptic diversity that transcends traditional physicochemical parameters. Furthermore, the proposed sensory wheel offers a common standardized language, establishing a methodological basis for future evaluations of the species.
