During the last 20 years, sustainability has become an important issue in the wine sector. The increase of producers' awareness and consumers' interest has prompted the emergence of wines labeled as organic, biodynamic or natural. The current letter aims to stimulate future research dealing with consumers' acceptance and interest towards wine with sustainability characteristics to focus on fungus resistant grape (FRG) varieties, that we consider a potential pivotal innovation for the future of the wine industry. Particularly, we expect consumer research to address the complexity behind future consumers’ acceptance of FRG, taking also into account insights emerged from our conceptual model.

The current study assesses consumer preferences toward different production methods of clementines (Citrus clementina). Based on a survey of Italian urban individuals (N = 345), responsible for household food purchases, it investigates whether clementines produced by means of integrated farming system are perceived as a desirable alternative to organic and conventional fruits. A conjoint analysis was applied to estimate the mean relative importance of three different clementine attributes (namely, price, production method and presence of a geographical indication) and consumer utility attached to the different attribute levels. Results revealed price as the most important attribute; while only organic farming provided positive utility to consumers. Subsequently, the sample was clustered into four distinct market segments based on part-worth estimates, offering useful insights for practitioners and policy makers to design tailor-made interventions aimed at fostering sustainable clementines consumption.

Participant attentiveness may represent a major concern for all researchers using online self-report survey data, as findings from non-diligent participants add noise and can significantly decrease results reliability. Therefore, attention checks have become a popular method in survey design across social sciences to capture careless or insufficient-effort of respondents, thus increasing quality of samples and the internal validity of the research. The aim of this note is to offer an overview and categorization of the different techniques adopted to flag inattentive respondents and present the potential drawbacks of not considering the issue in social sciences research.

Transitioning into a circular economy (CE) has been recently proposed as an agenda for reconciling global industrial systems with natural equilibria, but the current understanding of CE is ambiguous among scholars. Informed by recent growing CE literature, this study summarizes through three key propositions a set of indisputable insights emerging from the CE debate. In particular, the paper: remarks how CE takes stock of concepts of other schools of thought to drive policy interventions; depicts CE as a systemic transition of global industrial systems; and highlights the role of eco-effectiveness to upgrade business-centered approaches to sustainability. The proposed propositions are expected to contribute to reducing ambiguities in the CE debate and to convey coherence to future research.

While the medical community supports the growth of citrus consumption as part of a healthy diet, there is limited knowledge about consumer preferences for these fruits. The current study analyzed the purchasing patterns and drivers of fresh citrus fruits from a convenience sample of 346 Italian food shoppers. Results revealed that clementines were the citrus fruit purchased most, followed by oranges and tangerines. Sweetness and smell were important product attributes for respondents. Different drivers affect the purchasing frequencies of various citrus fruits. Taste motivation, with a specific preference for acidity, impacts orange purchasing. Similarly, clementines are purchased primarily for taste motivation, however, the core sensory attribute for respondents in this case was sweetness. Meanwhile, for tangerines, the taste motivation is less important than the energy motivation, and the size together with the color are the core purchasing drivers. These outcomes provide food scientists, agronomists and market practitioners with new insights into Italian consumers’ preferences for citrus fruits, thus contributing to a potential expansion of this market.

Implementing circular business models in food supply chains is an organizational solution to tackle the issue of household food waste, converting it in feedstock to upcycle within industrial symbioses. Adopting literature on practices of food consumption as theoretical framework, this paper analyzes consumers’ participation in circular business models. A conceptual model of the emergence of food provisioning practices in circular business models is designed and empirically tested, through a survey, in order to analyze consumers’ willingness to participate in an innovative food provisioning mechanism with retailers. Respondents were asked to choose whether to participate or not in a proposed program, and their choices have been modelled in an ordered logit model. 88% of interviewees declared sorting organic food waste as a normal activity in his household. 78.9% of participants accepted to participate to the proposed programs independently of the type of agreement’s attributes. 14.49% accepted only some programs depending on the program type, while 6.61% of respondents choose not to participate to any of the proposed program. Findings outline the expected participant as an individual already engaged in tasks to cope with risk in food provisioning and having already developed a long-lasting relation with a retailer. The study reveals also the opposite effect of concerns about tasks related to take-back system, such as food waste handling, and social desirability of recycling. Focusing on the business-to-consumers relationship, the paper suggests to practitioners interested in circular business models the possibility to adopt innovative ‘food-product-as-a-service’ approaches. Recommendations can be derived for future studies about the relevance of practice theory in the analysis of consumers’ engagement in circular business models.

During the last decades, organic food products have become the main sustainable alternative to conventional food consumption. Among the several organic food attributes that consumers recognize in organic food, healthiness has been reported as the primary motivation to buy products certified as organic. The objective of the current study is to assess the relative weight of the health attribute among other recognized organic food attributes. To achieve this aim, a multiple price list (MPL) methodology is adopted to elicit consumers’ Willingness to Pay (WTP) for organic extra virgin olive oil (EVOO). Findings show that the contribution of the health attribute to determine the average premium price for organic EVOO is 78.9% of its total premium price. The study generates managerial implications to promote further expansion of the organic food market.

In recent years, the public debate on the health and sustainability of palm oil and its use by food industries has strongly influenced consumer choices. Consequently, palm oil-free products have asserted their image as healthier and more sustainable food products. The current paper contributes to the extant knowledge on consumers’ perception of palm oil, particularly concerning preferences for food products carrying a “palm oil-free” label on their packaging. A web survey with a sample of 291 individuals was performed. Determinants of consumers’ preferences towards the “palm oil-free” label were estimated with an ordered logistic model using as the dependent variable the purchasing frequency of palm oil-free foods and a set of independent variables. Results show that respondents generally prefer palm oil-free products, perceiving these products as healthier or eco-friendly. Furthermore, individuals are strongly influenced by the available information on these foods that may guide their choices for palm oil-free foods, which may be perceived as cleaner. Findings also highlight the low degree of information on this ingredient, underlining the need for public information and communication campaigns through different media, in order to emphasize that no scientifically proven negative health effect is currently attributed to palm oil consumption.

Among foods with credence attributes, food with “natural” components have received in the last years particular attention by consumers. This study applies the BDM incentive compatible mechanism to explore young (18–35 years old) consumers’ interest and willingness to pay for chewing gums having the natural attribute. Our analysis shows that over 68% of consumers are interested in the natural attribute and are willing to pay a price premium. We also find that consumers’ higher age and interest in the environment have significant impacts on consumers’ preferences for the natural attribute.

There is increasing interest toward insects as an alternative protein source in Western countries even though, so far, most Western consumers react with disgust and rejection. The literature on consumer behavior has mainly investigated the willingness to consume insects with regard to human diet, revealing that providing information about the positive effects of edible insects and using familiar foods while ensuring that insects are not visible will increase the willingness to eat insects. What is still unclear are consumers preferences for specific insect-based products having different features in a non-hypothetical market. The current study analyzed 200 Italian consumers’ preferences for three insect-based products (carriers) such as pasta, cookies and chocolate bars through a non-hypothetical willingness to pay (WTP) elicitation mechanism, the Multiple Price List (MPL), in a mixed within/between experimental design. The influence of the different types of information on consumer choice and the main forces driving consumer preferences for insect-based food were tested. The findings reveal that different carriers generate different results in terms of WTP for conventional and insect-based versions of the products. Further, without being provided information, consumers deem insect-based products either equivalent (the same WTP for the two versions of pasta) or weakly inferior (lower WTP in the case of cookies and chocolate), while when information on the benefits of insect consumption is provided, consumers’ WTP increase for all the insect-based products analyzed. Finally, among the psychographic scales, Food Neophobia and Beliefs and Attitudes toward insects negatively affect the WTP for insect-based products.

In this article, we present and critically discuss the current and future key challenges of non-hypothetical experimental auctions (EA) to measure consumer preferences for new food products/attributes. The paper is composed by two complementary parts: a commentary of the core issues, identified in literature, related to internal and external validity of EA studies and a discussion of scholars' views (collected through a survey) on specific issues faced by EA research analysing consumer food preferences. Specific practical implications for EA studies performed by food researchers are also presented. Results highlight the opportunity to perform in-store experiments and the need to provide additional experimental details to allow replicability of research. Scholars also underline the increasing importance of a shared agreement on the use and regulation of deceptive practices in EA studies.

The current linear system of production and consumption is unsustainable. In the food sector, despite the fact that valuable natural resources are intensively used to produce and distribute food products, little is done to upcycle residues generated along the supply chain. Circular economy strategies are crucial for restructuring the take-make-dispose model through the active participation of all actors of supply chains. However, little is known about consumers’ willingness to participate in circular economy. A structured questionnaire was submitted to a representative sample of Italian households to assess the willingness of consumers to be actively involved in closed loops aiming at reducing food waste. Consumers are involved by returning their organic food waste to retailers in exchange for discounts on the purchase of animal products. The organic food waste returned enters in the production process of animal products. A choice experiment was designed to analyse alternative programs. Two scenarios were presented: one with a traditional technology (composting), and a second one with a radically innovative technology (insects as feed). Preferences and trade-offs, in monetary terms, among attributes were computed. Results depict a comprehensive portrait of the potential participation of consumers to closed loops inspired by the principles of circular economy.

Closed-loop agri-food supply chains have a high potential to reduce environmental and economic costs resulting from food waste disposal. This paper illustrates an alternative to the traditional supply chain of bread based on the principles of a circular economy. Six circular interactions among seven actors (grain farmers, bread producers, retailers, compostable packaging manufacturers, insect breeders, livestock farmers, consumers) of the circular filière are created in order to achieve the goal of "zero waste". In the model, two radical technological innovations are considered: insects used as animal feed and polylactic acid compostable packaging. The main challenges for the implementation of the new supply chain are identified. Finally, some recent patents related to bread sustainable production, investigated in the current paper, are considered. Recommendations are given to academics and practitioners interested in the bio-based circular economy model approach for transforming agri-food supply chains.
