Purpose: The purpose of this paper is to analyze the attitudes of meat consumers in Rio Grande do Sul, Brazil, concerning cultured meat. This State is characterized by its strong cultural identity and social practices, barbecue being its typical dish.Design/methodology/approach: The authors applied a cross-sectional survey with meat consumers residing in Porto Alegre/RS, the sample of which, composed of 538 individuals, expressed the population heterogeneity. The data were analyzed using the Pearson chi-square, Cramer'sV, and correspondence analysis.Findings: The results demonstrate that although six of ten people were willing to try cultured meat, only four of them responded positively to the willingness to consume it over conventional meat. Young individuals demonstrated a favorable attitude towards the product, expressing a greater propensity both to try it and to include it in the diet regularly. However, the rejection of cultured meat gradually intensified after 40 years old. The previous knowledge and familiarity with the investigated subject are not predictive of the intention of experimentation so that almost two-thirds of the individuals who did not know the product were positively willing to try it.Originality/value: Despite the recent intensification of studies about consumer behavior towards cultured meat, its analysis in a context in which meat historically plays a fundamental role in socioeconomic development is still little explored. The originality of our research is circumscribed by the understanding of the behavior of meat consumers, members of a culture where it plays a central role.

The purpose of this research was to identify, through a systematic review of the literature, the strengths, weaknesses, threats and opportunities of the production and commercialization of cultured meat, as well as to analyze the challenges to be faced by this new food biotechnology. For this, we analyzed 194 manuscripts published in the Scopus and Web of Science databases that dealt with cultured meat under the perspective of cellular agriculture, employing several nomenclatures. The results indicate that there is still no consensus in the literature about the strengths, weaknesses, threats and opportunities of cultured meat, which constitutes an emerging, multifaceted, and encouraging field of study, and a series of inferences have been made that provide insights into the knowledge analyzed. Finally, we propose an analytical model that combines sub-scenarios from which it becomes possible to understand and anticipate the direction of this new food biotechnology.

The cellular agriculture is been considered as a mechanism to minimize future negative impacts from the estimated world population growth for the coming decades. Among the alternatives of this technology, the development of meat grown in the laboratory stands out. Numerous researchers have been making efforts to develop this scientific field today. However, few studies have tried to map the intellectual panorama and emerging themes in the scientific literature of this scientific field. Thus, this research aims to analyze from the perspective of the bibliometric and sociometric analysis the scientific publications on meat cultivated within the perspective of cellular agriculture, indexed in the Web of Science database. We analyzed 91 publications on cultured meat, combining mapping data, patterns of co-citation and collaboration from scientific journals and authorship. We also analyze emerging issues in the research on meat cultivated. We noted that, given the participation of authors and co-authors from different areas of knowledge, there is not a pattern in the composition of collaboration networks. Also stands out the multidisciplinary nature of the studies on cultured meat, transposing different disciplines and analytical approaches. Those aspects concerning the environmental, cultural impact, technical viability of its productive process and impacts on traditional livestock production appear as latent constructs in this new food biotechnology.
