Dr. Mohammed Obadi is an Associate Professor in the School of Food Science at the Henan Institute of Science and Technology, Xinxiang, China. He received his Ph.D. in Food Science and Technology from Jiangnan University in 2018 and subsequently completed postdoctoral research at Jiangsu University. He holds bachelor’s and master’s degrees in Food Science and Technology from Sana’a University, Yemen.
His research interests include cereal science, starch chemistry, protein functionality, dough rheology, and noodle processing. His work examines how processing methods and ingredient interactions influence food structure, texture, digestibility, and shelf life. Particular areas of interest include physical modification of starch, gluten network development, fermentation, and preservation of fresh noodles. He also investigates relationships between starch molecular structure and digestibility to support the development of foods with a lower glycemic response.
Dr. Obadi has authored and co-authored more than 80 scientific publications in international journals, including Food Chemistry, Carbohydrate Polymers, Food Hydrocolloids, Food Research International, and Trends in Food Science & Technology. He serves as a reviewer for several food science journals. In 2025, he was included in the Stanford University/Elsevier World’s Top 2% Scientists list for single-year scientific impact.
