José Muñoz obtained his Ph.D. Degree in Chemistry at the University of Seville. He is Full Professor of Chemical Engineering at the Universidad of Seville, President of the Spanish Group of Rheology (GER), which is associated with the Royal Societies of Chemistry and Physics, and leader of the research group “Reología Aplicada. Tecnología de Coloides” (Applied Rheology & Technology of Colloids). The research laboratories are located at the Chemical Engineering Department site in the Faculty of Chemistry of Seville. The mission of the group is to get a deeper insight into the flow and structure of non-Newtonian materials. This involves rheological and microstructural studies, along with formulation and processing studies, which require the use of multidisciplinary experimental techniques. His research interests embrace the applications of biopolymers, such as polysaccharides and proteins, to the development of new food systems and colloidal materials. His research has also involved surfactant micelles, liquid crystals, detergents, food gum solutions for thickening and stabilization applications, emulsion technology, suspensions, suspoemulsions, emulgels, fluid gels and hydrogels.
