There is a large potential in Europe for valorization in the vegetable food supply chain. For example, there is occasionally overproduction of tomatoes for fresh consumption, and a fraction of the production is unsuited for fresh consumption sale (unacceptable color, shape, maturity, lesions, etc.). In countries where the facilities and infrastructure for tomato processing is lacking, these tomatoes are normally destroyed, used as landfilling or animal feed, and represent an economic loss for producers and negative environmental impact. Likewise, there is also a potential in the tomato processing industry to valorize side streams and reduce waste. The present paper provides an overview of tomato production in Europe and the strategies employed for processing and valorization of tomato side streams and waste fractions. Special emphasis is put on the four tomato-producing countries Norway, Belgium, Poland, and Turkey. These countries are very different regards for example their climatic preconditions for tomato production and volumes produced, and represent the extremes among European tomato producing countries. Postharvest treatments and applications for optimized harvest time and improved storage for premium raw material quality are discussed, as well as novel, sustainable processing technologies for minimum waste and side stream valorization. Preservation and enrichment of lycopene, the primary health promoting agent and sales argument, is reviewed in detail. The European volume of tomato postharvest wastage is estimated at >3 million metric tons per year. Together, the optimization of harvesting time and preprocessing storage conditions and sustainable food processing technologies, coupled with stabilization and valorization of processing by-products and side streams, can significantly contribute to the valorization of this underutilized biomass.

In this study, the effect of different photosynthetic photon flux density (PPFD) provided by LEDs (Light Emitting Diodes) and photoperiod on biomass production, morphological traits, photosynthetic performance, sensory attributes, and image texture parameters of indoor cultivated romaine lettuce was evaluated. Two cultivars of lettuce Lactuca sativa var. longifolium namely ‘Casual’ (Syngenta)—midi romaine lettuce with medium-compact heads—and ‘Elizium’ (Enza Zaden)—a mini type (Little Gem) with compact heavy heads—were used. PPFD of 160 and 240 µmol m−2 s−1 and photoperiod of 16 and 20 h were applied, and Daily Light Integral (DLI) values were 9.2, 11.5, 13.8, and 17.3 mol m−2 day−1. The experiment lasted 30 days in the Indoor Controlled Environment Agriculture facility. DLI equal to 17.3 mol m−2 per day for cv. ‘Casual’ and 11.5–17.3 mol m−2 per day for cv. ‘Elizium’ allowed to obtain a very high fresh weight, 350 and 240 g, respectively, within 30 days of cultivation in an indoor plant production facility. The application of the lowest PPFD 160 µmol m−2 s−1 and 16 h photoperiod (9.2 mol m−2 per day DLI) resulted in the lowest fresh weight, the number of leaves and head circumference. The level of nitrate, even at the lowest DLI, was below the limit imposed by European Community Regulation. The cv. ‘Elizium’ lettuce grown at PPFD 240 µmol m−2 s−1 and 16 h photoperiod had the highest overall sensory quality. The cv. ‘Casual’ lettuce grown at PPFD 160 µmol m−2 s−1 and 20 h photoperiod had the lowest sensory quality. The samples subjected to different photoperiod and PPFD were also successively distinguished in an objective and non-destructive way using image features and machine learning algorithms. The average accuracy for the leaf samples of cv. ‘Casual’ lettuce reached 98.75% and for cv. ‘Elizium’ cultivar—86.25%. The obtained relationship between DLI and yield, as well as the quality of romaine lettuce, can be used in practice to improve romaine lettuce production in an Indoor Controlled Environment.

The study examined the influence of light quality on the growth and nutritional status of romaine lettuce grown in deep water culture with a floating raft system using two different nutrient solutions. Four spectra of LED light were used with different ratios of R, G, and B lights (80:10:10, 70:10:20, 60:10:30, and 70:18:12). Two nutrient solutions with a low (A) and moderately high (B) nutrient content were used. Regardless of the nutrient solution, the RGB 70:18:12 light promoted the production of leaf biomass as well as inhibited the accumulation of K and Mg in the leaves. Moreover, those plants were characterized by a low Nitrogen Balance Index (NBI) and a high flavonol index. In the last week of cultivation, there was a strong decrease in K, P, and nitrates in the nutrient solution, and an increase in Ca. In the final stage of growth, symptoms of withering of the tips of young leaves (tipburn) were observed on the plants. The most damage was observed on the plants growing under 70:10:20, 70:18:12, and with the higher concentration of minerals in the solution (B).

Here we report the results of a three-year replicated field trial on the effects of novel clover- and alfalfa-based fertilizer products (Ekofert® K and Ekofert® L), with the input levels equivalent to 120, 180, or 240 kg N ha−1, on the yield and selected sensory and nutritional quality parameters of onion. The study showed that Ekofert fertilizer applied at all three levels produced similar or higher yields than the standard fertilization regimes used in conventional farming in all three seasons. Significant differences in onion composition profiles between fertilization treatments were detected within individual seasons; however, due to substantial interseasonal variation, no consistent differences could be detected between (i) mineral N and Ekofert fertilizer treatments, (ii) the two different Ekofert products, and (iii) contrasting Ekofert input levels. Results demonstrate that clover- and alfalfa-based pelleted organic fertilizer products are a suitable alternative for intensive organic field vegetable production.
