Ivan is a postdoctoral researcher at the Institute of Neurobiology from the National Autonomous University of Mexico (UNAM). Ivan holds a Ph.D. Food Science and M. Sc. Food Science & Technology from the Autonomous University of Queretaro. He was part of the Department of Food Science and Human Nutrition from the University of Illinois at Urbana-Champaign (2018-2019), the Faculty of Veterinary from the Autonomous University of Barcelona (2010-2011) and the Faculty of Pharmacy from the University of Barcelona (2011). His main research interests are the in vitro methodologies for simulating gastrointestinal digestion and colonic fermentation and the impact of food's bioactives on disease models suchas inflammation, obesity, and cancer.
