Dr. Bekzod Khakimov earned his MSc in Chemical Research from Queen Mary University of London (2009) and PhD in Plant Metabolomics from the University of Copenhagen (UCPH) (2013). He is currently Associate Professor at the Department of Food Science, UCPH. His research focuses on foodomics, which explores changes in the molecular composition and nutritional value of foods as a function of raw materials, production processes, and cooking, and the impact of food intake on human health and metabolism. To improve molecular screening in foods and bio-fluids, he develops efficient, cross-laboratory transferable methods using GC-MS, LC-MS, and NMR. He co-developed large-scale metabolomics data processing software for mass spectral (PARADISe) and proton NMR (SigMa) datasets. Author of over 100 publications, he has led several projects as PI. He received the Nils Foss Talent Prize (2016) and the Metabolomics Society Best Young Investigator Award (2015). He actively supervises MSc, PhD, and postdoctoral researchers and engages in international collaborations in food science and metabolomics.
